*UPDATEThis review was for the previous owners (Beast&Bottle) before they had to let it go in December. I have not been there since then.I can’t describe how much I love this place. This was our first visit and it did not disappoint. I was skeptical because of the reviews and that it’s attached to a hotel but after eating there I know I’ve come across something really special.Even though it’s attached to the Hyatt it’s an independent restaurant and locally sources their ingredients. The time and attention they put into making sure they serve the best ingredients shows in the flavors and creativity of their dishes.Don’t come here expecting your basic American food. Okay? If you want that, go somewhere else.Here, they delightfully surprise you with complex flavors that are familiar to the palate and somehow even better than the classic version of that dish. The creativity and talent it takes to make cohesive and pleasurable dishes are not something you see everyday. But Apple blossom definitely can give you that.Also, TJ, the gentleman who took care of us was amazing. Friendly, humorous, personable and thoughtful in his recommendations to us.I can’t wait for our next visit.

We really enjoyed this place. The food was delicious. The server was kind. The restaurant was bright and clean and pretty. Parking is downtown Denver parking. But it's hard to find a place that really leaves a good lasting impression lately and this is one that does.

During Restaurant Week we tried Apple Blossom for the first time. The service was wonderful. The frisee salad was fresh. The truffle shrimp pasta was rich with a good amount of shrimp. For dessert the limoncello bread pudding was well prepared. I would have liked a lemon creme anglaise with it. Overall it was a pleasant evening

We went there today for breakfast - Our server / bartender was great, very friendly and great service. Would give 5 stars, however I noticed that the bartender and server were both very busy, dishes were piling up, tables needed cleaned and food needed to be ran (the chef had to keep coming out) and I see the manager hiding in the main dining room drinking coffee looking on her phone the entire time. She never got up to support her team that could have used the help. Was disappointing to see such poor management.

Really enjoyed the Entrees. We just thought it was a little expensive. Very tasty food. My husband had the salmon and really liked it. The Seafood Risotto was delicious and spicy. I had the Rigatoni Bolognese and it was my favorite of all I tasted. It is featured in the Denver Passbook. Great Atmosphere/Service. We would go back.

The four course meal options were ideal. The wife and I both chose opposite options and were quite surprised how good everything tasted. Highly suggest you give them a try. You won't be disappointed.

The new menu for brunch is absolutely amazing! I love the way they do the breakfast potatoes and bottomless mimosas!I had the Crab Florentine. It was delightfully unique! My husband had the Nashville Hot Chicken sandwich and he was floored! He loved the combination of flavors and the Asian take on a southern chicken sandwich.100% give this place a try!

I actually really like this restaurant. It's never super busy, which is a plus when every other restaurant in the vicinity is jam packed with no room. The food is always delicious and I have never had anything bad there in the few times I've gone.

Jeff was dismissive and negligent. I waited 30 minutes for soup and grilled cheese to go? He was hangin out and not saying anything to me. By the time he brought it to me, he handed it to me and didn’t say anything. I took it to my room and it was cold. What a joke. I didn’t have time to take it down and ask for a refund. They put croutons in the soup and they were soggy. I also asked for avocado on the side and they put it in the grilled cheese. Food was disgusting. Thanks for nothing

Way too expensive for what you get and the menu is very limited. I ordered the duck sausage hoagie for $28 and it was incredibly disappointing. It was small, only 4.5 inches long, and dry. I also swapped the fries for a salad and all I got was a bowl of lettuce. No tomatoes, carrots, cheese…just lettuce. For a $28 price tag, I would expect more. Won’t return because of this.

I was super excited to try this place... But when I got there, it felt like a soulless hotel bar. My cocktail was a smoky Manhattan (which is generally up my alley) which was so over smoked as to be almost undrinkable. The food menu has been stripped down to 6 -8 items that were overpriced and uninspired. Service was fine to good enough. Oh... And there was a ~25% service charge that want called out until we asked about it.
