Huge and generous portions with a great price to match and very nice people working, but the food was simply not good at all (with the exception of the beef empanada which was very good).

The guys were great, the food is fantastic, got the Mambo Sandwich, Black Beans and Rice and the Empanada with a cold water drink. Sandwich is fresh dough toasted/pressed panini style, fresh chicken, fixed while I waited which was not long, hot and delicious. 5 stars all the way, will be back.

Great food place. People are very nice and would highly recommend. Food looks great and tastes great. Options for everyone and good bang for your buck. Will come here again when I can.

I'm so glad I've got to try this food truck. Their food was absolutely delicious! I ordered the ropa vieja, and man, was that heavenly! The meat was so tender and melted in your mouth and the spices were perfection. All of the sandwich components meshed well together as well! It was also massive, so I was only able to eat half of it. It was so worth it though.

I'm kind of torn with El Mambo: the staff is super friendly, the maduros and the congris are delicious and the cubano is huge. Everything sounds great, right? So why I'm I torn, you ask? Well, after eating a quarter of my cubano, I was done--not because I was full but because the rest of the sandwich had fatty pieces from either the pork or the ham, not sure which of the two, and it wasn't a good texture or taste. I'll come back for the maduros and to try out another of their sandwiches but definitely going to pass on the cubano.

Excellent Food truck cuisine. I just finished my 2nd El Mambo lunch. First was at Tailspin Ale Fest earlier this year. This time they came by my office park. I have had the chicken and the steak sandwiches as well as empanada and plantains. Great taste. everything was freshly made for me and quickly. and so much food! I didn't eat it all when I got it both times, but it made great leftovers too. I highly recommend giving them a try when you see them around.

I've been hearing good things about the Cuban food truck on Main Street. A coworker and I decided to give it a try and I have to be honest...it was one of the best Cuban sandwiches I have ever eaten. Having never eaten from a food truck before I was surprised at amazing the meal was and for a good price. $13 for a Cuban sandwich, rich and beans, plantains, and a drink. The sandwich had great flavor, the bread was crisp, the meat was perfectly tender, the salsa on the rice and beans had just the right amount of kick as to not be too overpowering, and the plantains were the perfect complement to it all. Definitely worth stopping at for a quick bite to eat should you see them parked downtown!

Best food truck experience ever. Tried them for the first time at Floyd's on Fridays in Beckley Creek Park. The lines to all of the food trucks present were very lengthy, but the line for El Mambo moved at a relatively brisk pace. I stepped up to order and the young woman taking orders was pleasant, polite, and cheerful despite having to work so hard in a truck in the July warmth. Then, my order was ready in a very reasonable amount of time and was prepared exactly correctly. I got the fish sandwich meal and it was delicious. *Huge* sandwich with a *lot* of meaty fish in it, cooked perfectly. Served with a side of amazing plantains that were sweet, soft, and irresistible. A side of congri rice was included as well, though I must admit the rice wasn't great. It was OK, but it paled in comparison to the rest of the meal. Anyway, all that plus a bottled water came to $13, which might just be the best price for the amount of food among any of the food trucks. And, as I said, it was *good*!

These guys are amazing! Get a huge, authentic Cuban sandwich for $8? Crazy! I tried them for the first time at the Fest of Ale, needless to say i was hungry, and even though there was a decent line they got the food out quickly. I was greeted quickly, they took credit cards (bonus) and within minutes I had a HEAVY styrofoam container of Cuban goodness. I could only finish half and saved the rest for dinner. The Cuban community in Louisville is exploding and this truck is a welcome addition. Give them a try!

Good portion, good price, ready in a good amount of time. My only suggestion for the cubano is less roast pork and more ham. The overall sandwich was very good, but like a few others I felt like it just needed a little extra something... And I think that something is more ham

I tried this for the first time on last Friday and I got the mambo combo which was cuban chicken sandwich with congri and plaintain. It was so good and came with a soda. I will definitely visit their food truck again. I was pleasantly surprised. The sandwich was so huge that I couldnt finish it in one setting.

I cried the first time I ate this food. I was also a little drunk, but a week later I came back to see if this food truck was truly worth my tears, it was. I think I cried because my whole life I've been eating Cuban food that didn't taste remotely as delicious and I felt like I was being lied to my whole life. The staff members were so kind and gave me a free sandwich because I teared up. The only thing I would change about this company is that I wish it was a restaurant and not a food truck.

I ordered the Cuban sandwich and plantains. The operator encouraged me to get the dinner with an empanada, chicken rice and a soda. Oh, my goodness! The sandwich was tasty but the sides were incredibly tasty. How do the make the rice so flavorful? The plantains were the best I've ever had in this city. Excellent food. I hope I get to have eat this again. A Super tasty surprise.
