We were traveling home from South Hampton, NY & found Evolution in maps for where to have lunch. Well, we fell in love with the whole experience, from the service (by the owner), the yummy food (I had the chicken & Waffles, which was delightfully delicious), & decided that this is now our go-to place when traveling which we do often! Oh, did I mention the cost?? Reasonable beyond expectation! Hope to get there again very soon!!!

10-18-25. This was our first time dining at Evolution, we heard all positive feedback and finally went. We were greeted by very friendly staff ( owners ) Dina, Joe, Jake and Chris. Welcomed us, sat with us like we were family. The conversation was easy! The menu had a varied selection of food all with a twist, the seafood melted in your mouth all cooked to perfection right down to the dessert, that are all made in house. We chose the pistachio cheesecake and it was absolutely delicious. They also offer many events and a great happy hour. We definitely recommend going into Evolution and having a great experience.

Consistently Exceptional — A Local Gem

We’ve visited Evolution several times for brunch, lunch, and dinner, and each experience has been outstanding. The food is consistently fresh, flavorful, and beautifully prepared — truly high quality across the board.

On our most recent visit for lunch, I ordered the special: scallops with butternut squash risotto. It was absolutely divine — rich, perfectly balanced, and generously portioned. I even had enough left over to enjoy again for dinner.

Brunch at Evolution is, in my opinion, one of a kind in our area. The variety is impressive, with something to please every palate — even our teenagers were thrilled. The bottomless mimosas are a fun and welcome touch, especially given the already great value.

Dinner has been just as memorable. I’m particular about steak, and their ribeye did not disappoint — cooked to perfection and full of flavor.

Our next quest is to head over and watch football and try the free halftime buffet!

Beyond the food, what truly sets Evolution apart is the atmosphere and the owners. The space is upscale, spotless, and thoughtfully renovated. We especially enjoy sitting at the bar, where the wine selection and seasonal cocktails are top-notch. The owners are warm, engaging, and clearly passionate about creating a welcoming, high-quality experience for every guest.

If you haven’t been yet, I highly recommend checking it out — Evolution is a standout in every way.

Wow!! What an unassumingly awesome spot! I was looking for a quick bite while driving through and this place really hit the mark. Amazing service, even brought something for my one year old to play with. Super reasonably priced, and damn good burger! Along with the happy hour mussels! I wish I lived closer! Thanks again you guys rock!

Today was Evolution's one year anniversary.....Joe, Danny, Dina and team congratulations.....my soulmate/forever partner Karen and I went to celebrate....AS ALWAYS... the service....the atmosphere....the FOOD...the DRINKS...was/were AMAZING....Good Luck on your one year anniversary.......and Cheers to many more years to come.....it is a very comfortable setting....everyone is friendly.....if you sit at a table or sit at the bar....the person/people next to you become your new friends....the portions are plentiful....if you have not been there yet or are thinking about going....DO IT NOW.....you will not be disappointed......

The spare ribs and rock shrimp with yum yum sauce were excellent. My Dad had pork chops giambota and he raved about the flavor. We had excellent service and the owner Joe was the very hospitable. Excellent if you have a food allergy concerns too. The owner Joe helped us to enjoy a safe, great tasting dinners.
