A friend recommended Cactus Blue. We went there for the first time, and we were very pleased with the food. The food was delicious, and the portions generous. My husband likes spicy, I like mild. They offer you a choice of sauces, so we both were happy. We'll be returning.

We tried Cactus Blue for the first time since its move from its Bethlehem location...it it had always been out go to Mexican restaurant. Unfortunately, the new Emmaus location is a downgrade. It's like a fast food take out place now. You have to order the food from the counter and they serve it to you on paper plates. The menu is limited versus before also. The food wasn't the same and it was cold. Very disappointing...We will not be going back.

I had the delightful pleasure of having lunch at Cactus Blue yesterday. I was treated like royalty by the staff. Elizabeth Ortiz, Jonas, and Pete treated myself and everyone of their guests like family. The atmosphere is safe, loving, and warm. The decor is clean, casual, and whimsical. Most importantly the food was delicious. Cactus Blue combines fresh, high quality ingredients with absolute skill to create unique and beyond flavorful dishes. The prices are a steal for the portion sizes and quality you get. I cannot say enough kind words. Cactus Blue is my new favorite lunch spot.

This was my first time trying. I ordered take-out through their website. Food was ready when I got there, everyone was friendly, and the place was nice inside too. The food exceeded my and my family’s expectations. Everything was delicious. We felt like the value for the money was also really good (lots of protein). Even my very picky 2 year old ate much more than she normally does which speaks volumes (to us at least). We will definitely be returning!

We were regulars at Cactus Blue when it was in Bethlehem. We loved the ambiance, the staff, and the food, which was always excellent. Perhaps if we didn't know how good it was, we might not have been so disappointed when we visited the location in Emmaus tonight. They no longer offer table service. Instead, you order at a window and your food is brought out to you. There are small round metal tables in the dining area and a bar facing a wall for seating. It was cold in the restaurant to the point that we ate with our jackets on. We arrived later in the evening and it wasn't crowded at all, so we sat at a table. We ordered Queso and chips. The plate of chips (they used to serve them in a large basket) and the 4 oz. cup of Queso were the first disappointment. The Queso was ok, but smaller and not the rich cheesy recipe that they used to have, and the amount of chips for 4 people was meager. For entrees we had chicken fajitas, a steak burrito and a chicken burrito bowl. The steak burrito was good. The steak had good flavor and might have been grilled, it was hard to tell. It was full of meat and all the fixings. The chicken fajita and chicken fajita bowl were served with shredded, possibly canned, chicken. We have never had a fajita with shredded chicken, they are always served with grilled chicken. The onions and peppers were served hidden under rice. Black beans were served on half the plate on top of rice. Everything is served on cardboard to-go boxes. Gone are the sizzling grilled veggies and meat on a cast iron skillet. Plastic 2 ounce containers provided the salsa, guacamole and sour cream. Plastic containers also are used to serve shredded cheese and shredded lettuce. The staff was polite and came over to check on us after serving. It is a BYOB. We did not have dessert, because they close at 8 PM on Saturday night, and we were there until almost 8 because we didn't know that they closed so early, until we realized they were cleaning around us. Dinner for 4 was about $60. We would not hurry back and are disappointed that the owners decided to change so much about a place that was so good.

This was our first trip since they moved to Emmaus. Was a waste of time. Not only did the location change but so did the menu, service or lack there of, and food. The verde sauce I ordered was so hot it was inedible. I had to send it back. There was no longer free salsa and the queso dip was granular cheese almost like Kraft Mac and cheese. They should not have kept the cactus blue name as nothing is the same. Such a disappointment. Guess we won’t be back.

This WAS the best Mexican in the area for a long time. LOVED IT… Then they closed their quaint restaurant and moved to some sort of take out thing…. TOTALLY WRECKED IT!! It’s little more than a Taco Bell now…..Very Sad!!

Tried this place for the first time since they moved from Bethlehem. The staff is super nice, eager to please and conscientious. The food was excellent too! It's set up to order at the counter and then they bring the food to your table. Casual style.
