Mixed reviews of the tasting menu: Cultural appropriation or cultural appreciation? (This review is not for everyone and no offense taken.) For those who may be sensitive to Asian cultural appropriation, tread carefully. It is usually exciting and inspiring to see so many East Asian ingredients on a menu at a high-scale restaurant. Their September 2023 menu featured ingredients such as Sichuan peppercorn, miso, shiso leaf, matcha, Hakurei turnip, and Miyazaki wagyu. This was not my problem - this could all fall into the category of cultural "appreciation" as they're delicious ingredients. The most problematic thing was the name of a mocktail called "Miso corny". If you don't see a problem in this word play (even the waiter thought it was "hilarious" and wanted to show it off to the whole table), feel free to skip this review as we probably don't see eye to eye - no problem at all. (But feel free to ask Google why many other people would find this phrasing offensive if you're curious.) This joke tinged the evening for me as I wondered about the intentions of incorporating Asian ingredients in specific dishes. With nothing alluding to or recognizing Asian culture, it seemed as if a chef decided to "pick and choose"/"appropriate" Asian foods, especially in light of the joke demonstrating a lack of empathy for the Asian American experience. It all felt so jarring in such a white tablecloth/European-styled setting – when nothing really seemed "Asian" and the waiters were mispronouncing Asian ingredients or did not even acknowledge that certain items were Asian inspired. Even their take on the "Century" egg was confusing - a quail egg with roe inside... not really similar in taste to a real Century egg. Perhaps even if you don't view this as an instance of cultural appropriation, perhaps it can be at least accepted that there lacked a cohesive narrative to all the food. How do dishes called quesadilla frita, sheep's milk and ocean trout all tie together with some random Asian ingredients sprinkled throughout? But please don't let my review stop you from enjoying food you want to experience - this was just my takeaway. Food is food to most, but to me food is also a cultural experience. Some bites were very excellent and unforgettable (delicious scallops, their "cigar") but others were misses (burnt tres leches, overly salted beef).
