I went to Boyce Thompson Arboretum this past weekend. There were only two food trucks. After waiting in line at the other truck, the only gluten free item they had was sold out. Several friends were in line at Maya’s Cajun Kitchen, so I begrudgingly went over there. I asked her about gluten free items. Not only did she let me know about gluten-free items available, she also accommodated a few changes I requested. Let me tell you, I was so glad the other truck no longer had the only gluten-free menu item. The bbq jackfruit (never had jackfruit until yesterday) dish she prepared was so unbelievably delicious. I don’t think it was actually bbq - at least not in the traditional sense - but it was amazing. She also included high-quality greens. If you ever see Maya’s Cajun Kitchen, do yourself a huge favor and order from her! I was so highly impressed by her kindness, professionalism and most of all, my lunch! Fantastic!!
