If you’re a Pho Pro skip Sincero.
I will break this review down in categories. We ordered Special Peanut Beef Pho, Crispy Rolls Bun and a Ca Phe Sua Da.
Presentation is great, bowls come out colourful and well proportioned. 5 stars.
Peanut beef Pho, I always take a sip of the broth first, this always tells me if the Pho will be good or not. Well disappointed from the first taste, no depth, lacked flavour, barely notice any peanut on this pho, no herbs. The broth was very watery, lacked traditional Pho accompaniments, no bean sprouts or basil but had sliced cucumber??? What cucumber in Pho soup? Noodles were cooked well and plentiful Beef was thinly sliced and tender but only an estimate of 2-3 oz of meat, 2 bites. $23.
Crispy roll Bun. Should be called Soggy roll Bun, rolls were obviously reheated, no crisp and texture was way off, noodles done nicely, lettuce and sliced cucumbers, that’s it. No herbs or spring onions. Nuoc mam, sauce was nice and flavourful. Overall disappointing dish and only half eaten. $21 ouch
Ca Phe Sua Da, Vietnamese coffee, condensed milk on ice. This came quick, too quick, we could tell it was not freshly dripped. A below average attempt at a Viet coffee. Disappointing also, $6.
Service. This is a cafe style eatery, order at the till, pay and pick up when ready. A gratuity is asked for at payment, before the food is eaten or the service evaluated. I opted to tip but regretted it at the end of this experience. Self serve water, cutlery, condiments, napkins and they ask you to return your dishes when finished. I was surprised I wasn’t asked to wipe the tables when done also. So, service is non existent.
We always wanted to try this Sincero Cafe as it is usually busy. So we have but we won’t be back.

Great place to stop by while driving on trans Canada highway. Authentic and flavourful pho and vermicelli bowl with a generous amount of meat! The outdoor seating is gorgeous on a sunny day.

Wasn’t expecting much when I ordered and got blown away by how tasty the food is. Their spicy level is real and I love it! Just wish they have a Vancouver branch.

Great food for a local vietnamese restaurant! Their special fish sauce for their vermicelli rice bowl is interesting - it's a bit spicy though but it compliments the bowl! Chicken bbq is really good too!
Limited seating inside but they have outside patio seating. The lady at the front was very nice, quick and efficient. We went in on a busy lunch and they were able to serve us fast! It's a self-serve restaurant so you can grab your own water & condiments at the shelves on the side.
We will definitely come back and a great lunch stop on our road trip! - July 21 Lunch -

Food was amazing! A little pricey compared to what we’re used to, but kinda get it since it’s in Revelstoke versus a big city. The kids beef pho was great! And I had the vegetarian noodle bowl, also super yummy and didn’t need to add anything extra. The only thing that’s tough is they seem to run out of menu items pretty quickly, at least on a Monday lunch service. But worth stopping by!

We had pho and some other Vietnamese food. It was ok but not missing something in the ingredients and taste of authentic Vietnamese food.

Solid spot for Vietnamese food! If you ever stumble into town this is definitely a must. I was very surprised how delicious the cha gio and bun thit nuong was. You order food at the front, get a buzzer, and seat yourself wherever a spot is open (they have plenty of tables inside and outside). You also grab your own condiments and water.
Cha Gio 5/5 crispy, typical eggroll
Bun thit nuong 5/5 pork was tender and flavors were delicious. The bowl didn't come with egg rolls so we ordered it on the side to add it into the bowl
Pho Bo 4/5 some traditional flavors were there but it's missing the typical Vietnamese garnishes like thai basil and sawtooth herb. The pho was still good, I've had better. If i had to pick, I would order bun thit nuong again.

Worried about going here because the name didn’t sound authentic Vietnamese to me but the food was so good. Bit of a cafeteria feel but service was friendly and they had a patio so our dog didn’t have to sit in the car!

Service sucks staff stuck coffee too forget to get the sets wher very dirty not helpful staff the menu stuck the painting on the tables wher peeling off the tables the staff wher complaining clues they didn’t know anything the staff were not help what so ever we never come back there ever

My husband and I stopped by for a quick bite to eat on our way back to Calgary. I had their new menu Spicy Peanut Butter beef pho, and it was delicious. The service was great, as was the atmosphere!
