This is a nice little spot with fits eats. The service is OK, but can be better. The server is nice and friendly, but they need 1 more server and it would be better. There is always only 1 actual server. Which makes the wait to get anything extra or to ask for anything else annoyingly timely. Especially when you're ready for the check and/or a to go container.
They don't have any sort of spicy/hot sauce here, (i.e. Sriracha, hot chili sauce...). There is only jalapeños or chili oil. The chili oil isn't hot and I don't like jalapeños with my wontons or potstickers.
However, even with these small things, the food is delicious and is cooked to order. I do recommend coming in and trying Capital Noodle Bar for yourself. I'm sure you enjoy the food and atmosphere.

Was looking for a new place to eat, glad we decided on this restaurant. It was empty inside for a Sunday, thought it was closed. Everyone seems to order to go but I’d say the presentation of the dishes it’s a must to dine in.

Food is great, service is great, the price is great for the quality of food and quantity. New favorite spot, worthy of seconds.

Try the spicy trio beef noodles with flat rice noodle. Legit savory bomb. Hainan chicken rice is good, but order dark meat. Smack yourself if you're gonna go in and order chicken breast. Try the shu mai. It's decently good. Got a heavier hint of sweetness and sesame oil. Southern Chinese taste.

They are pretty good about them initial order but almost no table visits to give more water. Block wood seats have no cushions or back support so my wife and I found that very uncomfortable. Food was good but not great. Two small things that bugged me was there is no Chinese mustard which I like to have with dim sum and no artificial sweeteners of any kind for the tea.

The food was pretty good. They only had pork dumplings and my kids prefer chicken so they didn’t love the ones they tried. They had plain noodle soup and ate some chicken potstickers. 🥟

We were seated right away and the ambiance is nice. Tables are long rectangles so not as convenient for family style as round tables but I get that they save space. We passed food back and forth when serving ourselves so everyone could get what they needed (we had a party of 8).

I was fine with the chow fun and other noodles. The juicy pork dumplings were decent but I don’t know if I would get them again. They are like XLB and there wasn’t as much flavor as other places I’ve tried. I think the chicken potstickers were okay as well. The noodle wrapper was quite thick and they were pan fried but already soft when they came out as if they had sat there instead of being crispy.

Overall, service was fine and the food was fine. If we had to choose noodles, for dinner we may come back.

Friendly staff, tasteless food. The broth for noodles was flavorless the meat was tough. Pork buns had parts of unmixed powdery chunks in the dough. And the basic noodles lacked any flavor and were over cooked. :(

The only complaint for me was the seating. Mostly benches, which I can't sit on for very long as a bad back.

Finally decided to give this place a try. Took the family for lunch as we have had a gift certificate for over a year that was given to us for a gift. The service was terrible. Maybe it was because we were in there at an odd time 2pm on a Thursday. We had to basically flag the waitress down for everything. We then presented our $20 gift card that said valid at the Brea location no expiration dates noted and were told they no longer accepted the gift cards at this location even know the location and restaurant name remains the same. Food was ok a bit bland and overpriced. There are so many better options in brea area for this type of food we will not be returning.

I walked in to dine on a Saturday afternoon and the service was amazing from the beginning. Very welcoming and friendly.
I got three different dumplings plus hot tea and paid just under $40:
1. Spicy wantons - thin wrapper and nice filling, but the chili sauce was lacking in my opinion. It had a good spice but it was bitter and very dry, despite seeing the chili oil on the bottom. I think using a chili oil that has aromatics would work better and with some soy sauce for balance.
2. Juicy pork dumplings (their version of soup dumplings) - the order of 4 seemed really small compared to most dim sum places but the filling was sweet, seasoned, & very juicy. The soup part had already leaked out of two of mine unfortunately though. Also the wrapper thickness was not consistent; one was thin and three were very thick, too thick. The wrapper could be more thin.
3. Sui Mai - these Sui Mai were BIG! They were probably the best of the dumplings I tried. The filling was well seasoned, the shrimp was snappy, & a perfectly thin dumpling wrapper.
Overall great spot for a dumpling/noodles fix & great service but certainly not a replacement for dim sum.

I am glad I found this place. The HK style wonton had a nice, flavorful soup to it. (The wonton could have used a little more boiling time though.) My husband and I devoured the thing to the last drop. Their Sui Mai and sweet potato cake were also delicious. I am definitely coming back.
