This place is great! We had the charcoal soft serve ice cream, boba milk tea, and rolled ice cream, and all of them were best in class. Plus, the eatery has a hipster industrial design with a string of good food choices and a bar. It's a nice hangout with lots of space.

Get the black sesame!! No substitutions required they clearly know what they're doing. Super creamy and the best rolled ice cream I've had with a perfect balance of cream and sweetness. No line on a Friday night and plenty of outdoor seating

When I saw that there was boba in the Windmill Food Hall, I knew I had to at least get a drink (if not more) when we visited. My ultimate goal was to get an ice cream by the sea for my son but they were sold out of the fish waffle cone...how is that even possible?!Also was tempted to get a bingsoo but we were all SO full from our lunch that we decided against it. I ended up just getting a jasmine milk tea w/ boba to appease my cravings. I definitely would have preferred if they offered real milk as an option (they offer almond, soy, oat, & coconut but somehow disregards organic milk...?) because I no longer like to pay a premium for my drink unless it has "real" ingredients...but we were in Carlsbad so my choices were pretty limited, unfortunately...

COVID Review: I've been here twice now, and while I like their strawberry rolled ice cream (with animal crackers, cheesecake bites and whipped cream), they are slow. My last visit was the worst - they served people after us first and didn't even acknowledge their mistake. I had a toddler that was melting down and the added unnecessary delay was not cool.

I came to the food hall for Mesteeso's guarana latte (try it!) today but since they were closed, I found myself wandering around looking for a treat and I stumbled on this place. The menu at first glance was a mixed bag for me- unique drinks and ice cream flavors, littered with mostly cheap toppings (read: crap) that just didn't fit the vibe I got from the fancy sounding name and the font its written in. I'm talking Oreos, animal crackers, Cinnamon Toast Crunch, Frosted Flakes, Cocoa or Fruity Pebbles... the list goes on. Anyway, the watermelon bingsoo caught my eye immediately. The employee asked if I would like to sub anything for the Fruity Pebbles I'd declined and I opted for more mochi. Super kind gesture and totally unexpected! The ice was silky, perfectly sweet and creamy, and the whole thing, big enough for sharing. I was very pleased with my order! I am betting the soft serve that came as a side piece has a few stabilizers in it as I didn't eat it immediately and the darn thing didn't melt. I was sitting in the sun watching it, mesmerized by the fact it was sweating a bit but holding its shape. (Gee, I wish I had that much grace under pressure. Just sayin'.) One thing to note is, items are made-to-order and one person was running the show. I realized she was doing everything from scooping the melon to shaving the ice as my order took a while to process. Luckily there was no one in line behind me. Overall, a cute place with a fairly large menu of ice cream, soft serve and drinks. I guess most everyone's order will take a bit here (the ice cream is rolled after all) so I won't feel bad for recommending the watermelon bingsoo, especially as summer is nearing an end.Pros:- super friendly- beautiful presentation- simple yet creative menu- lots of parking- near other food choices (in the Windmill)- lots of seating- open fairly late for beach city standards (9 pm)Cons:- mostly 'meh' topping choices- can be a bit slow

My kids tried the chocolate and mango flavor roll up ice cream. I thought the chocolate flavor was delish and light, not too heavy. Just what I needed on a hot summer day. The mango one had just enough tart and was refreshing. We also tried the strawberry banana shake which was delicious! They only have one person working so it was quite a bit of a wait. I would come back if I'm in the area.

Love all the desserts the fish ice cream, the boba drinks, the seasonal rolled ice cream,but my favorite is the Watermelon Bingsoo. Absolutely delicious, and it comes with a side of soft serve to boot!

Went tonight... Ordered a matcha latte with boba. The boba tasted undercooked, the matcha latte itself just tastes like sweetened instant matcha powder mixed into milk. Cheap!

They're known for ice cream, but I wanted boba and there was nothing else in the area lol. Chances are if I didn't recognize their name, I wouldn't have swung by. If you've never been here, the Yelp address will take you to the gas station in the corner and you'll get frustrated. Bing Haus is located INSIDE the food hall so go past the gas station!

I ordered the brown sugar milk tea. Worst milk tea drink I ever had. It tasted like milk and brown sugar syrup. No tea whatsoever. Another reviewer mentioned something similar...
