The pizza is top notch, a nice surprise in a small mountain town. No intentionally vegan toppings, but this isn’t the kind of pizza you want heavy toppings on anyway. The margherita with vegan cheese is probably just what you’d want.
So happy every time I return to this spot. As an annoyingly judgy I can be about Italian food & pizze, Il Pizzaiuolo’s food is legit! A pie (there’s the “via Brooklyn” in founder Peter’s background) is the right size for a real Neapolitan - we ended up sharing 2 pies and a salad for 3 of us and it was perfect. Loved the pretty pictures on the wall- Positano (hi Le Sirenuse) especially. So grateful for this spot.

Real wood fired oven. Tried the chicken pesto calzone and it was tasty. Calzone would have been damn expensive if I would have picked my own ingredients though. Base calzone doesn't include cheese, and adding mozz and ricotta alone would have been $4 extra. It's a good bake though. And I'd go back

It sucks i don't live near Colfax to come here more often.
This place has the best pizza for miles around. We've been going here for years. If you're driving through Colfax you will want to eat here. Our favorites are the salsicca pizza and the meatball calzone. You will love them- so tasty!!

Our family LOVES Pizzaiolo’s. The pizza is hands down the pizza we’ve ever had. The staff is always friendly and helpful. We’ve never had a bad experience there!

We were making our way back to Idaho picking up a car in California and stopped in for a bite here at Pizzaiolo. Food was excellent! We had pizza, salad, and Gelato. Took a little longer than we'd hoped, but was worth the wait. We're glad we stopped and even got road snacks next door at the gas station while we waited.

We love PIZZIOLO! The crust is to die for and the range of toppings is unmatched. Better pizza, better ingredients PIZZIOLO.But seriously, you gotta try it.

I’m from Europe and I’ve lived in Italy for a while. I don’t know the owners or how this place came to existence, but this is the closest you’ll be to having a real genuine Italian pizza. Now it may not be for everyone, specially if you are used to the fast food style pizza, but this is the real deal. Very authentic proposals and even with local twists. Excellent
