Based on Tonkotsu ramen.
There was way too much pork fat in my broth (might be preference). Having worked at a ramen soup; cook must have forgotten the swirl and scoop method to get an optimal mix of broth and fat.
Would give it another try, but probably stick to my usually ramen shop in an office building in Orange.
I went here for dinner on a Thursday and it was empty. The food is good, so why aren't more people going here?
