Carnitas vs. Birria. Do Taquerias know the difference anymore? Ordered and got wet slop.

It's hit and miss. Always get either asada or carnitas tacos or both. Sometimes it's very good and flavorful with juicy meat and equal amount of toppings. Sometimes it's dry and flavorless with lack of toppings or sloppily made. It's 50/50 if it's gonna be good or bad. I think it depends on who's cooking or preparing them that day.
