Indepdence has no stop lights and no regular, sit down restaurants (at least not that are ever open) BUT ... there are 2 food trucks serving great Mexican food. They're both really good and Lemon Food Truck has delicious offerings at a good price.

Tacos are good, had pastor and asada, would eat again anytime. Their salsa roja might be the best part, so damn good. Outdoor setup with a view of the mountains on a nice day, looks like they get a fire going at night? Honestly better than fancy dining at some high end place. Clearly a local favourite too since I stopped in around lunch and people just kept coming. Thanks guys, you're right all your stuff is good.

The food was delicious. I had the pork posole and the carne asada burrito. Both were fantastic. Very authentic. The boy who took our order was adorable. We loved it. Excellent spot to stop while traveling on the 395. Super quick.
