I suppose the fact that it is Jalisco style has a lot to do with its consommé and unfortunately it is not good, in my opinion. Their consomme has tomatoes ??? and changes the flavor of the birria completely. The consomme should taste like the meat, the bone that was used, and it should have that "brothy" consistency, not thick, like this one has. The meat outside the consomme is good but not as a dish. I won't be back, sorry. Canelo's is ?
Not really a birria eater, but this place is the best birria anywhere.The meat doesn't taste gamey.The soup is not thick or with lots of condiments. The giant corn tortillas are delicious and made from scratch.
