Attended a birthday celebration with 7 people. Hostess seated us right away and service was very good. Two of us ordered the Wine Country Cowgirl burger. Unfortunately, this was very unsatisfying. Though the meat was cooked properly (medium rare and medium), there was next to no brie on the burger (was so incredibly thin that I believe one of us only got the rind and no cheese) & the bacon onion jam that could not be tasted. What flavors came through were the balsamic reduction and the arugula. These two flavors were so strong that I couldn't even taste the meat (though I don't think there was any seasoning to the meat anyway). As this was almost $50 of the total bill, it was disappointing. On the other hand, another of our party had the fish & chips and thoroughly enjoyed it.

Burger was undercooked when we asked for it to be medium. It was raw in the center. Fish sandwich was better than the burger and the flavor was ok. The tartar sauce was thicker than i would expect. Sweet potato fries were good tho.

We wanted to like Pub Republic, and appreciated that the staff happily accommodated changes to our reservation. Unfortunately, we just didn't enjoy the food. Everything seemed heavy and greasy, too much breading on the fish, and the meat in the Reuben sandwich didn't seem like the right preparation for that sandwich (undercooked? under-seasoned?). Service was fine. Part of why we made this reservation was the many good reviews, so perhaps we caught them on an off night.

Love this place!! Great beer selection and great service. I’m hesitant to even mention their crispy pork belly with carrot-ginger puree, but it’s THE BEST pork belly dish I’ve ever had. I want there always to be room for me when I’m in town and not too crowded. Tess took care of me today and I had a really great conversation and a great time. Seriously, this is a great spot with wonderful food and drinks. 5 stars. Thanks Tess 💕

Food quality, taste, presentation and value is good. Space is nice, but the AC has been too cold and blowing on us both times we have come recently, usually sitting in tables across from the bar. Main issue is staff needs more training on professionalism, teamwork, sanitation. We saw a few staff eating with their hands while leaving the kitchen and walking into the dining room. There was a staffer probably early for her shift but sitting in the bar area, feet on another stool, staring at her phone and not greeting anyone. We needed to waive down our server to take our order, bring us our check, and then take the credit card--after it sat for 5+ minutes. The manager had to clear some items sitting on the table forever that the staff ignored. There were hand and fingerprints all over the door glass even in the AM before they got busy. These are SMALL things but they add up to give the impression that the staff is in charge and doing the least they can get away with at times and management needs to improve training and supervision and the overall service culture. Keep in mind: the servers and bartenders were very good when they were face to face with the customers, but after that they we in some cases sloppy and apathetic. Poor teamwork and poor supervision.

We had a very good experience at Pub Republic. The food and atmosphere are good. The service started out good and then later it was hard to get ahold of our waitress. Maybe she was required to take care of too many areas. She was very nice and friendly though. It's a convenient and pleasant restaurant.
