After finding my “kolache connection” permanently closed, I googled kolaches in Aurora and found We Knead. I tried the Cheddar Cheese Sausage and the Jalapeño Cheddar Cheese Sausage (this one’s nice and spicy). Both were among the best kolaches I’ve ever had. The cheese was inside and out, melted and caramelized and crazy delicious. The owner was above and beyond friendly and professional. The atmosphere—what can I say? It’s a donut factory—unpretentious and sweet...
This little shop hasn’t been open that long. If you’re from the area you may remember it opening in early 2024, but that was under a different owner/manager. It’s under new management now.
If you are from Texas, like me, (born and raised) you should check out their kolache’s. They have three kinds and I love the sausage cheddar one. I even used to sell them where I worked when I was still a teenager…and their’s are much like what I miss from back...

Way more than just donuts! The breakfast sandwiches are fantastic (on croissant, bagel or English muffin), and my wife said the iced chai tea is the best in the area. Great variety on all bakery items. Clean and friendly, overall this family-run store takes care of their regulars and has an awesome selection.
