Visited during the week, chefs table tasting menu incouding wine pairing. Service was excellent, everything was well spoken about including the wine, they answered lots of questions. Food being a tasting menu was of course small, but it was many courses and plenty by the end of the meal. Food was fantastic, tasted great, a few dishes not quite perfect but still tasted great. They spoke about the wine so passionately and it was interesting, wines from small producers and families we'd never heard of before. It was fairly quiet, since we visited during the week, but being at the chefs table downstairs this didn’t impact us as the servers and chefs speak to you regularly. The staff were great, very attentive, interested, and cared about the service. Visited during our anniversary and the team made it very special. This is worth a splurge or experience, worth the value for a rare fine dining meal rather than every day.

I wish it was socially acceptable to lick plates in public cuz holy cow.. this was some of the best food I’ve ever had in CO. Maybe even in the US.

Rootstalk has become a favorite while in Breckenridge. Every dish was flavorful and the service was excellent. We will be back!

We were greeted and seated by Megan. Her knowledge of wines is readily apparent as she walks you through the wine list. We selected the '23 Petrussa Sauvignon Blanc and the '23 Tyler Pinot Noir, both were very delicious. For dinner we selected the Nee Zealand Sea Bass ad the Hayden Fresh Farm Pork Collar. As you see in the pictures both entrees were plated perfectly. They tasted beyond delicious. On a scale of 1 to 10 I would give them both a 15. Through the course of our meal Megan would check in and see if everything was ok and to be sure our experience was way beyond ok. Rootstalk is housed in a building from the 1800s and when you walk in you will feel the Classiness that is there from the ambience through the meal and even in the desert offerings. Speaking of desert we selected the Chocolate Date Cake, mmmmm goood. The entire experience was over the top. Next time you find yourself in Breckenridge I highly recommend you try Rootstalk, you'll be glad you did.

We got to experience the tasting menu and both the food and the service were stellar. It was by far the best restaurant experience we've ever had. Rootstalk will definitely be a must everytime we visit Breckenridge.

The pork collar was too salty. Also, hidden 3% service charge at the end? Really? . And probably “if you ask us to remove it. A free judgemental look is on the house.” Should be on the bill too.

Couldn’t have asked for better service, food or an overall experience. We were celebrating our anniversary here and dang….the personal touches and hospitality was unmatched to anything we have ever experienced. We’ll 1,000,000% be back.

We knew we had to get reservations for dinner here when we read that it won an award as one of the best restaurants in CO and a James Beard winner. And after eating there, we can see why it won. They offer a 7-course chef's tasting menu for a reasonable $150 but we opted to create our own tasting menu. Every dish we had here was outstanding but here are a few of the ones that stood out. The sourdough tartine was incredible with light, airy bread and bright, flavorful tomatoes. The pumpkin pie was not at all a traditional pumpkin pie but with it's eye catching presentation and huckleberry compote, we were blown away. Highly recommend a meal here!

Rootstalk's food and staff were absolutely incredible! We celebrated our engagement with them and received a beautiful card signed by the cooks, waitstaff, and others working that night. That was an unexpected surprise and really made our night! We did the tasting menu, and every single bite was perfectly crafted/prepared. Thank you all so much for everything that you do for your patrons! You all really go the extra mile and it's greatly appreciated. We will be back!

We had the pleasure of experiencing the Chef’s Counter dinner at Rootstalk, and it was nothing short of phenomenal. I’ve truly never had my taste buds exercised in such a way — every course was creative, balanced, and left a lasting impression.
The atmosphere was wonderful, intimate yet lively, and the highlight was the direct connection with the chef. He not only crafted an incredible meal but also took the time to share Rootstalk’s philosophy, which made the evening feel personal and educational. That extra layer of insight elevated the whole experience beyond just dining.
I didn’t opt for the beverage pairing this time, but I can only imagine it would take things to an even higher level.
Thank you to the team at Rootstalk for creating such a memorable evening for our honeymoon dinner — we can’t wait to come back.
