Since moving south of DTC, we’ve had a hard time finding a Mexican restaurant we love. Las Fajitas in Castle Pines was our go-to for a close fix. It’s not our favorite but is pretty decent. Lately there’s been a lot of inconsistency with breakfast. I order a chorizo breakfast burrito and get a bacon one instead. Today we ordered omelettes, listed with green peppers and onions, smothered in green chile. What we received were omelette tortillas stuffed with fajita style veggies - onions, peppers, mushrooms and zucchini. It was odd and definitely not what we expected. Some people are allergic to mushrooms, so that could be really disappointing. Just know you may or may not get what you order.

Excellent service very friendly and attentive waitress and we were seated right away. The food servings were plentiful and everything was so fresh and flavorful. The meats were all so tender and well seasoned. Tortilla chips were not too thick or thin just perfect crunch and the salsa (felt like a mild to medium heat) was delicious as well.

I tried the burrito Grande and ate maybe 80% of it. Had to take the rest home and it was really good as a leftover as well. The jalapeño crème sauce was my favorite but the green chili is also very good. The shredded chicken was very good and I absolutely loved the shredded beef.

I didn’t have any room for dessert but definitely plan on coming back again but will get a smaller plate to try the desserts.

Came here for lunch, was a bit busy but not too bad. There was a large group so I was expecting service to be at least slow, but it was not! Service was quick and friendly. (Server didn't let some rude guests affect her, thankfully the rude guests left pretty quick).

Got chips and salsa when we sat down and chips were perfect and the salsa was some of the best tasting I've had at a restaurant. Food came out quick and hot! (Temperature hot). But it was also well seasoned too. Unlike some nearby places that seem not to put much of any seasoning, this was nicely a medium spicy (I don't do **spicy** but also don't want unseasoned either). All our meats were moist and flavorful.

Food quality was good and portions were very filling (partner had to take some of his home as it was muy grande!)

Definitely will come back!

Salsa was great, but apart from that my food was served room temp tire close to cold. Only thing I’d recommend for the ones who make their white queso to not but too much milk in it if they’re making it from scratch along with it coming out room temp aswell. The rice taste like sink water was used for it. Hope this info helps this restaurant out

Avoid RUBI= rude!
We had a disappointing experience with our waiter, Rubi. She was unfriendly and rude, tossing the menus on the table and getting our order incorrect. When she delivered our food, she dropped the plates on the table with no grace. Her demeanor and attitude made us feel unwelcome. It seems that customer service may not be the best fit for her. I hope the owner gets rid of her, this is the third time she has a nasty attitude. On that note her red lipstick is distasteful & awful. We won’t be returning.

The waitress mistakened 2 of our party as children, the food was god awful, we got charged the incorrect items (ordered a shredded beef taco, received a ground beef taco, got charged for shredded beef taco). Food was incredibly bland. We're definitely avoiding this place from now on.

It was just too hot for me. Next time I will ask for my entree without red sauce. Nice people though!

Parking: Large, free parking lot. I went on a Sunday at lunch time. Plenty of parking. However, many of the adjacent stores were closed.
