Wanted to celebrate my honey’s birthday and decided to try Shiloh. Loved eating out on the patio (which has recently been beautifully done). There’s plenty of shade and a lovely water feature that try’s to drown out the sounds of passing cars and motorcycles. It took some time to have anyone come check on us and no water was brought out once we sat down.
Eventually we ordered our drinks and perused the menu of so many tempting choices. He ordered the ribeye with a loaded baked potato. It was thinner than we’re used to, so the medium rare wasn’t perfect, but pretty close. I decided on the elk fried steak with garlic mashed potatoes with a side of country gravy and it was delicious. Both the salad and soup were promptly brought out and tasty.
Since it’s on the pricier side, we’ll probably come back for a special occasion in the future.

Slow, inattentive service with little effort shown. Asked for ketchup...it was placed on table without apology when my meal was almost finished. Food was very good but service disappointed.

This is one of the best places to eat well in Cortez. We are from Argentina and going from Vegas to Colorado, stay here in Cortez to visit Mesa verde National Park and eat here !!!!. The food is great, whatever you choose will be “excellent ”. Salmon was great, Burgers OMG, pasta is perfect !!! From the outside you may say, is this good??? yeah !! No doubt, great service and this was only 90usd for a family of 4 !!

We tried the Shiloh Steakhouse for dinner last night and generally loved it. It's not a huge space and it filled up quickly. Our server was friendly. For drinks we both ordered a whisky smash and I was pleasantly surprised by how boozy these were. For an appetizer we had the fried clam strips which were crispy, crunchy and a decent portion. They also served a small fresh loaf of bread with butter and raspberry jam. Both were a great beginning. We each had a salad to start. The caesar had more croutons than I'm used to, but that's not a problem. For entrees we had the sirloin tips and country fried elk. Loved the tips served with onions and mushrooms. The baked potato side was also good. I did find the vegetable side of zucchini and squash to be pretty salty. The garlic mashed potatoes were good with the country gravy. The elk was fine, but I wouldn't have known it was elk. I thought this was a very good meal and would love to go back and try some of their other dishes.

We have been here several times. Last time we were with friends and drinking wine along with delicious steaks. This time it was just us and a more casual night out. The new patio is delightful and it was nice to see that the menu has the flexibility to go from a splurge wine and steak night to a moderately priced burgers and cocktails night. We will be back soon! Thanks for doing what you do!

Shiloh Steakhouse left me feeling underwhelmed. The restaurant seemed to be understaffed, leading to slow service and serving incorrect orders. While the food was OK, it didn't stand out as exceptional. Overall, I would say that the experience was just average.

I was going to eat outside, but the noise from the constant traffic, along with the poor water feature mask attempt, I got my order to go. I ordered the bison burger medium with waffle chips. At the the hotel 2 min. away the chips were good, but the buffalo patty was well done beyond recognition. If I could have withstood the noise I would have dined in and sent the burger back.

Nearly everything was great, I had a Ribeye cooked just slightly more done than their menu described, I chose medium based on the menu, but mine was more medium well, but still flavorful, and juicy. Service was very good too.

We had high hopes due to online reviews and hearing people waiting in line to be seated saying how good it was. We waited at the door for at least 15 minutes before being added to the list. Nobody was at the front to greet anyone standing in line and whenever the gentleman came to the front, he didn’t even look up. After getting on the list and waiting outside talking to a friendly couple, we were FINALLY walked back after several tables left and having to go check in with them AGAIN. A gentleman apologized and told us he had a large party he just took care of that he wasn’t the waitress, but a cook. - super nice guy. Our waitress comes and we order right away.. thinking it’ll be a quick turn around. An hour goes by and the waitress said “I’m sorry we had a large party come in and we just finished with them..” I’m like ?? How much longer because we’d like to leave if it’s another 30 minutes or so. (We explained how exhausted we were) She disappeared, meanwhile a lot of other tables received their food, got to check out, and was leaving. More tables sat down and ordered right away so I’m like ??? I flagged down another waiter and I said “hey can we please pay for our drinks? We’ve been here for 1.5hrs now and we’d just really like to go. We already let her know if it was going to take a while, to let us know. She hasn’t came back. Another 15 minutes go by and here is our food. Our burger and kids food was WAY over cooked while our potato and fries were under cooked. Probably the worst part is that you’d think after suggesting we should just leave since they were so busy, they would honor our request… not slap together an awful meal to people that were absolutely exhausted.
88$ …. Awful. Seriously. Have better manners and respect for people who’d rather leave and not make them pay for an expensive meal that took nearly 2 hrs to get and wasn’t even prepared properly!

Excellent food, great outdoor dining area, and fast and professional service.

We are in town for the weekend and this small steakhouse was close and a great choice.

We got the steak and chicken pesto. Both cooked very well. Pasta had great flavor. Steak was ordered medium rare, but it came out medium. Still a good quality steak.

Outdoor is a very romantic setting. They have a koi pond and a water fountain. Only negative were the plastic chairs. They didn't match the aesthetic.

Overall a great experience. Highly recommend if you are in the area.
