The charcuterie board was beautiful and Diana’s expert knowledge of the tequilas and how they affect the taste of the cheese was next level. Just had one of the most unexpectedly mind-bending nights at Vault 730. Diana put together a tequila-and-cheese pairing that somehow managed to be both classy and delightfully nerdy, which if you know me, is exactly my love language.
The pairings were spot-on: bright, herbaceous tequilas leaning into creamy, funky cheeses in a way that made you stop mid-sip and go-oh damn, that actually works. Even better, Diana didn’t just serve it, she brought the science. Ester chains, fat structures, volatile compounds, all that cool behind-the-scenes chemistry that makes a pairing sing. It was fun, it was smart, and it was delicious.
Vault 730 is doing something real here. Thoughtful, curated, community-driven food experiences in a town that loves good flavor. If you haven’t been, go. And if you see a tasting, sign up fast.
