Picked up call ahead/ to go. Had a beer and talked with Coleen when I arrived. Pizza was ready but cold beer and conversation sounded good. Coleen is a gem and of course the Traffic Jam with extra pepperoni was super tastee. Thank you Proto’s!
I stopped in last week to give this place a try and I must say it absolutely exceeded my expectations. The service was exceptional, the waitress was such a sweetheart and made my dining experience even more amazing. My pizza was delicious, the cheese was hot and perfectly melty, I loved the sausage slices rather than ground sauce, the sauce was full of flavor and not bland like some places in the area and I loved the flavor of the crust and I’m usually not a fan of thin crusts...
You thought you liked another pizza place until you tried Proto's; now you loathe that other place.
Proto's is undoubtedly the best Neapolitan pizza you can get in Longmont. Probably all of Boulder county. Fresh toppings, perfectly balanced sauce, and a crust that may or may not have crack in it.
