We love to eat at Summit Tacos and had them cater a taco bar for our rehearsal dinner in Lyons and the food was excellent and we received many compliments from guests. They even provided pre-batched margs and dessert. Edward and his team were very friendly and executed the event well. I will say the email communications leading up to the rehearsal dinner, including day of, were a bit of a struggle as a bride, but it all came together in the end and we were glad of our choice and...
Truly can’t recommend this place enough. As someone from South Texas, these are by far the best tacos in Colorado. Events are always a great time, atmosphere is awesome, and the owner and staff are super friendly and community driven. This is a great local spot to support

I do wish they had chicken tacos and I wasn’t a fan of the beans. But it’s not bad for quick Mexican food. Like I said, the hot chocolate is really the special thing here (just don’t expect it to be thick).
