There being an abundance of taco truck in Longmont, there's plenty of options for various palettes and preferences, I recently tried this lunch truck which I would consider quite authentic.The service was great, was quite welcoming and friendly, food didn't take long.The location may be a bit easy to miss or difficult to get in if heading northbound and there's oncoming traffic being quite close to intersection. It's across the street west of Walmart in North Longmont.I was quite hungry if recall correctly ordered 6 tacos, you never quite know size until you see them; these I was having trouble finishing.Ordered1 lengua1 birrea1 quesa birrea1 Adobada and1 asada I believe.so usually I like to try as many different taco types as possible on first visit.However some places will not sell less than 2 or less than 3 of each item.Luckily here they don't make any exceptions so ordered what I thought were 6 different types, caught me slacking as the birrias and quesa birrias are basically the same at least meat wise with exception queda birrias will have grated melted cheese.The perfect taco? The lengua was their star and first one I tried. It's difficult to find lengua cooked to perfection and prepared adequately so it's not chewy.This is it! If you've been hesitant, this would be the place I would recommend you try it and it goes great with their salsa, I usually prefer a green salsa but often green and red pair we mixed. If available.Birrias? I'm very traditional while open to anything delicious. Regardless of presentation or uniqueness the main ingredients must be cooked well.Birrias is one of those tacos that became popular, the new kid in the block at least here in the U.S. or abroad from Mexico. However birrias, carnitas have long history and I would say they are best prepared by experts which is rarely the case. It's my opinion why birrias became popular, cheese adds flavor softer texture IF birrias itself is lacking; when you come across a greta tasting birrias you don't want to dilute it's flavor with cheese. This was ok not bad typical of what's available almost everywhere nowdays. Most birrias is not as tender as it should be and lacks flavor everywhere it's sold. Nowdays.Lengua 5+Birria 3.5Quesa birria 4Adobada 3Asada 4.Service 5+I would definitely stop by and give them a try, they also sell desserts that looked great, to be honest I'm more of a food type of person and only every now and then will have sweet desserts.
