I moved to Colorado in 2017. I’ve been going to another meat market for years. I wanted to buy closer to home and try Merc out. When I went into the location I was looking at the prices on the website compared to what was on their white board, There is a big difference between the prices. I said something to the gentleman and I was told they’re locked out of the account, but he seems to be able to respond to reviews. So that seems odd to me. I was greets by a young man who I told what packages I wanted to order. I told him I had to run an errand and I’d be back to pick it up. When I returned I was greeted by another gentleman who went over my order and said it would be ready in 3 days. I haven’t ran into this situation at the other Meat Market but it wasn’t that big of a deal. The gentleman told me he would call me when he prepared my order to confirm it would be ready. He said they would probably start it on Friday and freeze it and we could pick it up Saturday before they close. Saturday came and I hadn’t heard anything so I called 4 times and there was no answer. I drove up there and the gentleman I spoke with was there and said my order was ready and another guy was packing everything up for me. When he was done, we went to the counter so I could pay. The gentleman never told me my total, I had to ask and he was a man of few words, but took care of me and took the order to my car. I got home and thawed out some meet and it’s definitely lacking quality I’m used to. I have opened and used 4 lbs of meat and all of it is discolored on the inside. I know it’s due to lack of oxygen but this is a first for me. The taste isn’t what I’m used to and unfortunately I spent $240 on meat so it will be a few weeks before it’s gone and I’m able go back to my regular Meat Market. I’m pretty disappointed and I won’t be returning.
I love a good sandwich and these sandwiches are really great! I went with a build your own - Turkey sandwich on wheat. Really fresh and flavorful!
Also purchased a couple of NY strips and some bacon. Enjoyed the steaks last night and they were extremely tender. Will be back!!

This is the best butcher/processor place in the area. Highly recommend because they take time to talk to you ask about your needs and wants. Great recommendationsnon meats you need and preparation techniques.

About every other Saturday they have a pop up called Louisiana Glynn's...the best southern food you will find in colorado. They start serving at 4 until they run out, and it goes QUICK.

I had a problem with a wheel on the road and this restaurant was nearby. The breakfast was great, the staff were very friendly. God bless your business ???

We had a Birthday party for my Dad. We got all the meats and salads from the merc. They also have a great selection of sausages there. Ask for Mike. Outstanding service and quality.

The butcher shop has everything you could want and the little restaurant is quite tasty. Will probably shop here weekly for a long time to come. Nice atmosphere too!

This is a wholesome little place. The butcher shop has a nice selection of meats and BBQ supplies.Not to mention their sandwiches are on point.

Highly recommend this place! Purchased a big tray of smoked beef brisket for a large gathering. Cory and Miguel both helped me with my order, they were so extremely helpful and very nice. The brisket was "outta-this-world delicious" and very tender. When planning a large gathering it can be overwhelming, but they made it so much easier for me. I will definitely be going back to The Merc soon.

Absolutely the best meats in this area! Warm diner/restaurant vibe with quality homemade foods. Gifts, snacks, take-home ready+to+eat from the smoker. Oh, and grills and all the supplies. Local treasure!

My wife and I have been telling ourselves for years that we have to stop in and see what this place is all about - the menu sounds great, the reviews gave some hope... Our experience made us realize that we have not been missing out on a good thing. Our 2 sandwiches took 15 minutes to make (it was not busy). We ordered what ended up being the least excited and slightly soggy Reuben and a very soggy least appealing California Club we had ever witnessed. The employees at the deli looked as though an evil warlock had passed through town and drained their life force from their souls. I hope to find the kielbasa we bought from the butcher are delicious and not bowel destroying.
