I was only there for maybe 10 minutes, meeting a friend before I had to leave. The brisket was delightful! The Mac and Cheese was perfect and I am a m&c enthusiast!!I didn't have time to eat it hot and it was equally delicious cold. Thank you for really engaging my friend, John, and I. Hands down the best meal I have ever eaten. I’m serious. I have traveled with my work for 20 years and have eaten in the best of the best places. And all I had was the pulled pork sandwich with coleslaw and the French fries with the white sauce! I can’t even???

White Paper is really good BBQ. These folks know what they're doing. They keep it simple and high quality. Lunch is the best kept secret. On weekend evenings it's pretty hopping and crowded.

First visit here today. Everyone was very friendly. Got a prime rib sandwich with dip. It was delicious and a melt in your mouth treat. Got a beer from the bar. They serve Berthoud beer (from next door). It was also very good. The only thing I would like to see is that they would be open more days. They are closed on Monday thru Wednesday. Seems like they could make more money working on those days.

Great food! I have celiac disease and they are VERY celiac friendly. All their meats, sauces, and most sides are GF. They changed their gloves, washed hands/suffaces my food was going on. Very knowledgeable and made me feel confident in being able to enjoy their food. The people there were very friendly. If you love Texas BBQ, this is the spot to go. Hands down, going to go again.

White Paper is a hidden gem, The portions are plentiful, The folks running the place are super cool,, been there a bunch,, last time I was there, I had a cheesesteak, just to try something different, it was delicious. I got the Silverado combo a few times, the food lasted me for a week. my favorite side is the potato mash with green chilis.

We’ve been here before and food was good, we went again today and had the $45 platter, the only meat that was really good was the pork belly, the ribs tasted old, the sides are really not it. Cornbread smelled stale, I used to love the cream corn but not this time, they changed the recipe and it’s not good. The ranch beans were just not good at all. Waste of money, what a shame

Absolutely taken by surprise. I have had Texas, Tennessee, Florida, New Mexico and now Colorado BBQ and this place just hit the top of the list. Even their Collard greens were amazing.

I must say I was blown away by my experience tonight. Not only was the barbecue some of the best I've ever had, the service was absolutely outstanding. Got to speak with the owner and he showed me the smoker. Great margarita and beers! On top of great traditional BBQ, they had so many other great things on the menu. Going to try the smoked prime rib next time. Highly recommended!!!!

Service was great, very nice staff. The jalapeño elk sausage was awesome the brisket was a little dry, pulled pork was alright, sides were good!
