DAMN GOOD COFFEE!!!! My wife and I visited Paonia back in 2021, and I can't STOP buying their coffee. Rubicon has two NEW roasts which are my now favorites, Guatemala dark roast and Sumatra dark roast. Originally, their Guatemala medium roast is what turned me! So if you like a really good medium roast, definitely go with the Guatemala medium roast. One of the restaurants we wanted to try. Nice selection of menu items with really fresh ingredients. My wife enjoyed their BLT and I had the Breakfast Burrito. Amazing and most savory flavors for both. Another one that we are going to enjoy when we return.
