First time visiting, and I was pleasantly surprised. The restaurant was somewhat empty for a Saturday afternoon, but we attended immediately. The art decor is phenomenal. Their menu has a twist to certain recipes. We ordered the enchiladas adobada and carne asada. I'm not sure if the enchiladas were made with flour tortillas, but it tasted like it. Their pickled onion topping was awesome. Highly recommend visiting
I am kind of obsessed with finding good tacos in the Boulder area so I decided to give Rosa's a try. I got two tacos, Tijuana and carnitas. The Tijuana had grilled skirt steak, and that meat was really delicious. The carnitas taco was a very nice mixture of ingredients. Maybe a little pricey but very good tacos. My only criticism is that they need something with a different texture to enhance the experience, something crunchy like crispy carnitas bits or fresh cabbage.
I have been coming to this restaurant for long time and have always had an amazing experience! The food is Authentic Mexican to die for. Service is always fast, efficient and friendly. The owner Fausto is always there taking care of the guest and going above and beyond to make sure everyone is happy. He also makes the best Guava Margaritas ever! Thank you
