Rosa’s Mexican Restaurant is a thorton gem. Me and my girlfriend had a great experience. Everything tasted fresh and well prepared.
I ordered the Pez—Fortaleza (grilled mahi-mahi with creamy cotija rice, zucchini, and cherry tomato salad). The fish was perfectly cooked—light, flaky, and very fresh, and the cotija rice paired really well with the vegetables.
We also shared the tropical guacamole and I had a mezcal mule, which was refreshing...

My favorite Mexican food in all of Colorado for a sit down meal full of flavor. From the fresh guacamole made at your table to the bear chicken tortilla soup I've ever had 4;(# place does not disappoint.

I have been to your restaraunt several times and the quality is always top notch. Very fresh ingredients, and great service.
The Tamarindo margarita and fish tacos were also personal favorites.
We will be back, several times!
