Delicious baked goods! Great for breakfast, road tripping snacks, and gifts for friends and family. Downtown Trinidad has so many great spots.

All three items we got were excellent. Prices were a little high, but the food was worth it.
Absolutely loved the cream puffs! Probably the best I’ve ever had. Love the cute shop. Definitely worth going.

We were happy to see this place still in business! Unfortunately the staff didn't offer us any freshly baked items. We were there when they first opened and the display cases only had day old items. We appreciated the clerks honesty regarding the day old items. We purchased some but would have been happier with the freshly baked items.

This place could make me fat. The pastry is divine their cakes topnotch and they have a pastry that's brown sugar and maple syrup that looks like a pop tart. You should get all of those....

These pecan croissants are absolutely to-die-for perfection. I was unsure about the look of them, thinking they were too dark, but one taste and heaven! These compare to the very best croissants we've had in Paris, but I've never had a pecan version.

I came to Trinidad. CO ti visit my brother-in-law
He mentioned collies bakery was really good. I decided to give a look. I saw several gluten free items had to get for my wife. Including gluten free cheese cake. .my wife was in heaven!!
Then I looked further and had to have cinnamon buns. Sticky rolls. almond cousants, coconut macaroons with chocolate base, blue berry scones
All made from scratch the best ingredients
All I can say you need to come to Trinidad CO just for Collies Bakery off on Commerce and Main.

I adore this bakery and visit it every time that I'm in town from Louisiana. They should bottle that scent. It's amazing! I've tried lots of things here, and it is so hard to pick a favorite. The cinnamon rolls, sticky buns, scones, macaroons, hand pies, Collie-Os are just a few things that come to mind. Try anything or everything, and you will be delighted!
