It's nostalgic, it's friendly and most of all it's just plain GOOD! Maple syrup with the melted butter already added was phenominal. The bacon was thick and perfect. The coffee was very good as well. I will be back if around the area again!

A good dose of nostalgia served with great food.
The Agave Diner is a small traditional aluminum clad style standalone diner. It has been a fixture in Seymour since 1951 and owned by different people during its long history. The Agave Diner’s new owners, a husband and wife team, have been in business for a couple of years and are a welcome addition to eating establishments in Seymour.
I recently visited The Agave diner and was pleasantly surprised by the décor, service and food quality. Although The Agave is a Mexican themed diner, they have an extensive menu sure to please just about everyone. The food was very good and served in an acceptable time frame. If you sit on a counter stool you have a clear view of the kitchen staff at work.
Seating is relatively limited with 11 seats at the counter and 4 booths that can easily seat four people each. The hours are from 7AM to 2PM. To avoid not getting a seat it might be best to avoid the peak hours for breakfast and lunch.

This place is truly special -- really deserves all those 5 star reviews! The food is made with fresh ingredients -- and it's a rare place in CT where you can get Mexican breakfast items! Everything we've tried here is delicious and made from scratch. I also love how many of the menu items can be made vegetarian or vegan. We know it's going to be a great day when we can start it with breakfast here!

Agave Diner: A Hidden Gem with HUGE Flavors
Agave Diner, a tiny silver trailer nestled in a charming spot, is a must-visit for those seeking unique and delicious food. The husband-and-wife team behind the diner offers exceptional service with warm smiles and friendly banter.
The small dining space, with its four booths and counter stools, may require a short wait, but it's well worth it. Every dish is made fresh on-site, using high-quality ingredients.
I recently enjoyed a delightful breakfast with my daughter. My over-easy eggs were cooked to perfection, served alongside handmade corn tortillas, a tangy cilantro green sauce, flavorful heirloom refried beans, crispy home fries, and savory longaniza Mexican sausage. It was a hearty and delicious meal that left me feeling pleasantly full.
My daughter ordered the breakfast burrito and couldn't finish half of it, praising its amazing flavor. While the food was outstanding, the highlight of our experience was the friendly and personable hostess. Her warm hospitality made us feel right at home.
If you're looking for a hidden gem with exceptional food and service, Agave Diner is definitely worth a visit

Agave Restaurant in Seymour, offers the healthiest, fresh, flavorful meals. Today was my third visit. I ordered the Mexican Fatoush salad with grilled shrimp. It was absolute perfection. So crisp, colorful and clean eating. Easily a two meal size. The owner is such a kind and attentive person. There prices are quite reasonable. Their coffee is also very good. No photo.
