My introduction to Mary Lawrence’s amazing talent as an expert chef and inspiring teacher did not arise from any kind of philosophical conviction, however; instead, it arose from the urgent, ongoing need to address severe, chronic gastrointestinal issues that I had been suffering from for over two decades, and further back than that, as well. I knew about veganism in a vague and hazy way, and sympathized strongly with the idea of improving relations with our brothers and sisters in the animal kingdom. Yet I remained resigned to the conventional notion that ingesting animal products is essential for obtaining necessary protein and essential amino acids – in short, that relying on animals for food is just “the way things are.” Nevertheless, I continued to be compelled by a sense of desperation to resolve debilitating physical symptoms that were interfering with the day-to-day performance of my professional responsibilities as an educator, including intense gas pains, painful cramping, and persistent constipation. I had consulted numerous physicians as well as alternative health providers, and tried a wide variety of possible remedies, all with no results. Eight months ago, I had the good fortune to come upon Mary Lawrence’s business card by chance in a health food restaurant; I kept it next to my phone for a week or two, and finally ventured to make the call, a decision that I realize today has profoundly changed my life. Mary began delivering meals at my home every two weeks; I quickly discovered that vegan cooking can be utterly delicious. Within a very short time, I began to feel an appetite for food again – something that had pretty much disappeared due to my constant apprehension over the discomforting side effects that followed ingesting any kind of nourishment. I began actually looking forward to meals again, and realized that I was savoring each bite as I ate, rather than simply chewing and swallowing because it was necessary for physical survival. Today, I am delighted to say that my hair – which had been thinning so badly that I could see my scalp when I brushed it in the morning – has thickened once more and taken on a rich luster; constipation no longer troubles me, my skin tone has returned to a vibrant radiance, and I feel a renewal of physical energy, a marked increase in mental clarity, and an emotional buoyancy that I have not experienced since I was a child. I feel a resurgence of general well-being, an overwhelming and truly welcome sense of optimism and hope, an overflow of love for life. This is the gift Mary Lawrence offers every receptive reader in the pages of her marvelous book, "Eat Vegan With Me."
