Coyote Rojo Mexican Restaurant is a great local spot for a nice dinner out. The mildly priced menu offers a good selection of dishes, with helpful staff to assist. While the free salsa and chips could use a bit more flavor, the Chicken Mole Enchiladas are a definite hit, along with the delicious Margaritas. The Chimichangas and Coyote Burrito were also excellent choices. Although the overall look of the restaurant may need an update, the fantastic Tilapia and top-notch service make it a worthwhile dining experience that customers will want to repeat.
