It's a rice bowl so you know what you are getting. Looks like to be the best vegan option with the other restaurant here just doing a plain burger.
When I was there the edemame beans had some cheese dropped into the container which was pretty disappointing.

We were excited that they have “healthy” vegan options at a theme park but when we looked in the food guide that they leave on the counter we were surprised to see that almost everything contained seed oils, vegetable oil or canola oil. They also charge you for each additional topping so plan to pay more if you are vegan and want more veggies.

Was looking for a healthier option to eat during my visit to the KSC and found this one. You can make your own poke bowl and they even have vegetarian options. The poke was good although quantity could be bigger. The service was quick and efficient too. But it's a rather small restaurant and fortunately it wasn’t crowded but can be an issue during weekend or holidays. But I would say it's the best place to eat at Kennedy.

Maybe I chose wrong... but the food was very ugly, we ordered rice, noodles, chicken, barbecue, corn, avocado and cheese... The only thing that tasted good was the cheese.

This is a rice restaurant where you can add carbohydrates, a main dish, a side dish, and whatever toppings you like. It was a great combination and I enjoyed it.
There aren't many seats, so we recommend buying and eating outside or securing a seat before ordering.

Unexpectedly found this Korean bbq rice bowl restaurant tucked into a-corner of Kennedy Space Center Legends exhibit. Reasonable price to pick your own toppings, found it a refreshing alternative to typical fast food fare. Needs mire seating, very cramped. Food servers pleasant but cashier had the personality of a brick. Threw awY receipt didn’t offer it to us! Good food, bad cashier.

1000 times less crowded than other places there, food is great, staff is friendly. Korean bbq boneless ribs excellent. Ordering process easy, and we got a table right away, too after we got our food

I was beyond grateful to find some vegan (and healthy!) food at Space Bowl Bistro in the Kennedy Space Center. I built my own bowl, with a base of brown rice, topped with jackfruit, edamame, avocado, tomato, corn, and a green cilantro sauce. The presentation/pic leaves something to be desired, and the size of the dish was underwhelming, but to find a healthful vegan meal inside a tourist destination like this one was a huge win! Menu items cannot be modified from what the chef designed. Do you like every ingredient listed for an entre item, except for one (maybe due to an allergy) and want it removed? Too bad.Acai bowls are usually a great nondairy alternative to ice cream. But the yogurt "cannot" be removed. What a d*** rule. We had a party of 6 wanting to order, but turned around and left instead.
Dietary restrictions: Acai bowls do not accommodate those with lactose intolerance or a dairy allergy, because the yogurt cannot be removed.
