My birthday was a couple of days ago and I told my son for my 60th birthday. I wanted a delicious chocolate cake with mousse, we live in Sweetwater and he ordered it to be delivered. That was not an issue. My heart was set on having an amazing cake, especially coming from my son. It means the world to me, however, the cake was so dry that it was crumbling apart. The only thing that tasted good was the mouse in the filling. It was a disappointment. The cake was not fresh at all. Perhaps because it was delivered they Send old cakes to customers. I would recommend that your bakery should know that if you were going to be charging and Delivering cakes to your customers at this caliber, you will lose your customers

Gilbert’s Bakery on Bird is one of those places that reminds you why local bakeries matter. From the moment you take the first bite, you can tell everything is made with care and experience. The croquetas were outstanding, perfectly crispy on the outside and tasteful on the inside, with rich flavor that wasn’t greasy or heavy. The guava and coconut pastry was a real highlight, nicely balanced, not overly sweet, and incredibly comforting with each bite. The chicken empanada was just as impressive, well seasoned, flavorful, and cooked just right, with a flaky crust and a juicy, satisfying filling. Everything tasted fresh and thoughtfully prepared, the kind of food you crave when you want something familiar and done right. This is the definition of a classic Miami bakery that truly knows its craft. I honestly wish you would open a location in the Midwest, because I would be a regular without hesitation.

absolutely amazing. The flavor and texture were just perfect, fresh, light, and made with so much care. It’s not your typical heavy dessert; you can really taste the quality. I can only imagine how incredible everything else must be.

Gilberts is definitely not what it used to be. The service was terrible, with one older lady at the register that takes for ever. I decided to stop by today as I hadn't been there in years. I bought 3 croquetas and 3 pastelitos. when eating my croqueta, I bit into something hard and pulled out of my mouth a wrapped up plastic. Seems they rolled the croquetas with platic wrapping. Ugh. No more, thank you.

I used to love Gilbert’s Bakery when it first opened; it had such a great reputation and amazing food. I hadn't been there in years, so I was excited to stop by today and picked up a variety of items. Unfortunately, I was really disappointed with the quality. The only thing that stood out in a good way was the chicken empanada. Everything else was mediocre at best. The croquetas were overpriced and not tasty, the pastelitos de guayaba had a strange flavor and just weren't good, and the sandwiches were bland. The carne fría, in particular, seemed old and not fresh. Overall, it was a disappointing experience, and it’s clear that the quality has gone down over the years. Any Cuban bakery in Miami can provide better and tastier items at a better price.

I just bought a chocolate cake for my husband's bday and it tasted like it was old besides being very dry..I've bought many cakes in the past and they tasted very good.It was very disappointing.
We used Gilbert's catering and they did a phenomal job not just with delicious food but with setting up and displaying in theme. Would definitely use them again!
$14 for 2 empanadas and a couple croquettes, empanadas are extremely flat with hardly any filling and croquettes are very greasy. I’m fine with paying extra for a quality product but that is just not what you get at Gilbert’s if you want empanada wrappings either no filling to double the cost of any other location then this is your place.

They should have a policy of no dogs inside- there are a lot of containers of pasteles and other foods practically exposed at the bakery, to have someone with a huge dog on a chain sniffing around come in. Groced me out. I’ll go somewhere else for pasteles next time!!! And on a different note, the staff is unfriendly and rude…they have a nasty attitude
I had a very pleasant experience at Gilbert’s bakery. The service was very pleasant.

Without a doubt, I give five stars to the service and attention.
