Bonsai has very cool atmosphere and unique menu options. Their sushi is the best I've had in Pensacola.
Was delightfully surprised by how nice the restaurant was. Kevin, the server was excellent as well. Highly recommend this place.
The hotel is in need of an upgrade. Perhaps when this happens restaurant will be on first floor. Awkward having a restaurant on the same floor as hotel guests...especially with dirty linen on the floor in the hallway. Restaurant was okay. Thank you!
Fabulous as always! First time trying the crab ravioli, will now add it as one of our favorites. Smoked Tuna and A5 wagyu are always on our go-to's!
The starters were the showstoppers. Excellent cocktail very $$ The entree and desserts just didn't impress
EXTREMELY DISGUSTING FOOD, AND VERY OVERPRICED FOR DRY, GAS STATION SUSHI QUALITY!!!! EVEN THE DRINKS WERE NASTY. DON'T GO HERE, THERE ARE WAY BETTER RESTAURANTS IN THE HOTEL OR AREA.
I'm going to give an honest review. The fact it's in a hotel should tell you a lot- especially a Hilton. It's very tiny inside and very poorly designed for the price of what you're getting. Secondly, we were the only people in there for at least an hour or so then people trickled in a total amount of people in the place or four tables . Only seats 20 All right, let's get to the food very limited options and very overpriced. Wagyu appetizer $54 for about 7-8 tiny slices of Wagyu. I will give a very high star for the tuna nigiri, but you only get one for $9 dollars . My husband liked the rising sun, which was a lobster and eel roll. Presentation was nice of all the sushi. Anyway, we got a few more rolls. I have to eat gluten-free so they really didn't have many options for me. The drinks are strong, so that's a win. Most places water down their drinks lately and you can tell they did not. Overall, our bill with tip was $413 extremely expensive for two people, and we're from Atlanta and we spend like that regularly but we usually get more food and just a better atmosphere. Sorry it's time for an upgrade in decor. Overall rating of the whole experience 2.5-3
server Kevin was amazing and so sweet and the chefs made my daughter's Deluna roll with cooked salmon as she does not eat raw suglshi it was amazing and so delicious. Thank you! Even though the lobster Ramen was extremely spicy we still ate it and we're not able to narrow down where the spice came from but we loved the squid ink noodles. On the reservation I put that we are partly celebrating my birthday later this month and I received a birthday card which was extremely sweet and definitely unexpected.
If I could give this a 10 star I would. Excellent experience food, service everything. Thank you Alyssa for the recommendation and service. Definitely will be back.
We've eaten here a few times and while hidden away in the hotel, it's very worth it. Chef and the team are super personable and the food really is amazing. Fresh, delicious and beautifully served.

Every visit is a unique experience filled with ambience, friendly staff and delicious gourmet cuisine. I would highly recommend this is a must do if ever visiting the Pensacola Beach experience..
Excellent experience, best Japanese/Asian food in Dlorida. Easily would fit in as a top sushi restaurant in New York City.
Absolutely fantastic! Culinary artistry on a plate with the best ingredients to match. Hands down best sushi restaurant in Pensacola. The environment was quiet and relaxed with wonderful views of the ocean. I can't say enough wonderful things about this restaurant.
Top notch Japanese-fusion restaurant in Pensacola. The food and drinks are standouts in terms of being delicious with thoughtful and neatly balanced textures. The service was very good from Kevin and the ambiance hit all the correct notes for a quiet evening meal. The views of Gulf are some of the best. Would go here again.
A/C was not working and 4 courses for a $500 plus Omakase was very very weak.....definitely not worth the dining experience..........
