We saw where a food truck court was available nearby, the Village Garden. Within the Garden are several concepts; Acai Bowls, BBQ, Coloradan Fusion, Mexican and Pizza, along with a coffee offering within the permanent building on site. We stopped by on a holiday and we're happy to see them open. The prep time was long, but there was just one employee taking orders, cooking, and running for drinks. The food was great. We had fish tacos and beans & rice. The tacos were very good, fresh and come in flour or corn tortillas. The beans and rice were phenomenal! Spicy rice and black beans with peppers, onions and blistered tomatoes. Oh my! For $7 per taco, it would be nice to add some chips. We will definitely return.
