We've dined at Spago over a dozen times the food and service are amazing. We live here and perhaps since we are not guests of the hotel we were seated in the very back of the restaurant for our 7:30 pm reservation with no ambience whatsoever next to large tables with babies -the family room-not our favorite table by any means for our party of 5 adults. Felt like we were in a banquet room. Made our reservation several months ago.

Fantastic experience at Spago! We dined there last night, previously on Jan 2nd with friends, and many other times when we were on Maui in the past. Last night's dinner was particularly wonderful thanks to Peter and the staff. Food, wine and service were excellent! The kitchen even whipped up some blinis for our caviar service. We will definitely return when back on Maui! Mahalo, Spago!

Spago felt more like a lovely dinner spot than a destination for celebrating a special occasion, as our anniversary wasn’t acknowledged during the meal by our main server.
We had been quite spoiled at the Fairmont restaurants and at Ferraro’s, where we were given wonderful sunset-view tables and where our anniversary was warmly acknowledged. At Spago, we were seated three rows back near the bar. Fair enough—only so many tables can have prime placement—but unlike Ferraro’s, there was no acknowledgment of our anniversary at all. No “Happy Anniversary,” and no sense that it had been noted. I assumed I must have left it off the reservation, as there was no recognition during service.
The only mention came from Vicky, the assistant server, who remarked on how unusual 31 years of marriage is and asked our secret. That was appreciated, but it was the extent of it.
Our main server was professional but somewhat perfunctory and not especially warm. Vicky, on the other hand, was friendly and genuinely pleasant.
On the food side, there were some bright spots. I enjoyed the Guava Lava—a lemon, coconut, and pineapple cocktail that drinks like dessert. The bread platter was a highlight: onion sourdough focaccia, Samoan rolls, and wheat-and-thyme flatbread crisps served with butter, yuzu, and baba ghanoush. I also enjoyed the macadamia nut–crusted mahi mahi, which was well prepared.
For dessert, we ordered the Lemon Zinger. Only ten are made each night due to the labor involved. It was light, refreshing, and nicely done. “Happy Anniversary” was written in chocolate on the plate—there, we were finally celebrated, Spago-style, thanks to Vicky.
If you’re there on a Saturday or Sunday evening, you can catch a partial view of the Fire Knife show, which takes place at 6:30 pm and is visible from the balcony.

The ambiance and views were beautiful, but unfortunately the experience didn't live up to them. Despite the restaurant being nearly empty and having made reservations in advance, we were seated at very undesirable table. The service was very polite, but a bit intrusive. Most likely because we were the only table and they sat us right next to the server station so they were hovering over us for our whole dinner. The food was very expensive for the quality and portion sizes, and the salmon pizza was especially disappointing.

Skip the bigeye tuna—it’s poorly seasoned and bland, almost like eating a lightly cooked protein bar. The Thai-style dish, on the other hand, is far better. Definitely order that instead.

The service truly stood out—Cooper and Kapu were attentive, warm, and made us feel genuinely welcomed throughout the evening. A special shoutout to Kapu, who gave extra care and attention to us and made it a standout meal for us!
The sushi was phenomenal, the spicy salmon and Himachi spicy roll were packed with flavor, perfectly balanced, and beautifully prepared. We also dined on the himachi special as an appetizer. It was delicious. Every bite was better than the last. And the drinks? Absolutely amazing,creative, well-crafted, and the perfect complement to the meal.
Between the outstanding service, incredible food, and elevated atmosphere, Spago at the Four Seasons is a must-visit. We’ll be thinking about this meal for a long time and can’t wait to return. 🍸🍣
