I was at pancheros last night at around 8. The employees are very clearly trying their best to maintain the quality and service that makes Pancheros. They were on top of their game making sure each customer was welcome and they were very understanding when people wanted to add things last minute. I'm from the west coast where we don't have pancheros. it's got softer tortillas, more well-mixed filling, and nicer rice than chipotle. very heavy on sour cream though. the tofusada was filling but could be cooked a bit firmer and have marinated longer for more flavor!
