🔥 Five Stars for The Chop Shop BBQ – Caldwell, ID 🔥

Chef Chris absolutely knocked it out of the park! From the moment we walked in, the hospitality was top-notch. We ordered the Pit Master Sampler and every bite was unreal – tender, smoky, and packed with flavor. You can really taste the passion behind the pit here.

If you’re into craft cocktails, The Bees Kneed Lavender made with mezcal is a must-try. It was perfectly balanced – floral, smoky, and just the right amount of sweet. Easily one of the best drinks we’ve had in a long time.

We 100% recommend this spot whether you’re a BBQ junkie or just hungry for something real. We’ll definitely be back!

My absolute favorite place to get some BBQ. Without fail, it has been worth the hour drive to get here.

Excellent ribs!

The food portion is huge for its price and the meat is really tender.

For a very small hole-in-the-wall, Chop Shop BBQ delivers excellent smoked meats with creative cooking. We watched the chef pick herbs from his own herb garden. You can't get more fresh than that! We dined in on the outdoor patio. It offers a view of Indian Creek that is peaceful and charming. We highly recommend the Chop Shop.

Ordered sample platter and an extra side:
0 Served cold, old, tough, weird seasoning.
Sausage: 5/10 undercooked, served cold.
Pulled 0 barely average. served cold.
Ribs: 8/10 Not much meat, served hot, tasty. no sauce on meat.
Squash Mac Cheese: 8/10 Tasty but served cold.
0 served cold, average.
Rolls: 7/10 served hot, wish we had butter for them.
0 served without ice?

When your server asks you how the food was, and it's awful, what are you supposed to say? It wasn't her fault the food was cold and in some cases, terrible. We lied, said it was good, and left.

She meant well, but we won't be going back.

Great atmosphere and the food was great. We had the pulled pork sandwich (amazingly smoked and seasoned), my youngest had the chicken tenders, and they did not disappoint! The tenders are hand breaded, juicy and seasoned well! I had the prime rib special with scalloped potatoes and an asparagus pesto salad. The prime rib was seasoned well and the scalloped potatoes were made from scratch!! We started with an appetizer called the Grenade, deep fried mashed potatoes! Over all experience was amazing and reasonably priced! The only recommendation that I would offer is that the honey butter rolls be buttered up a little more!

This was an amazing place to have my afternoon dine at. Our server sawyer had amazing attendance and gave us our food and drinks in a very orderly fashion and great timing. The food was exquisite along with the environment, where we sit. This is a very Friendly Family Place and I would recommend and coming here again.

The good:
I ordered the half pound brisket with candied yams. The Brisket was decent. I don't normally like sweetened yams/sweet potatoes, but the sugar was caramelized perfectly. It was good.

My friends ordered the chicken wing starter. The chicken was cooked properly and was very good.

The bad:
The service was the worst. By watching the other waitresses and interacting with them, it seems to have been just ours. It was as if we were bothering her.

She walked away in the middle of a question. She ignored my deaf friends request to look at him while she spoke (he can read lips). Tried to take plates away that clearly still had food on them we were actively eating. Didn't ask about the burger my friend clearly didn't like.

The chef or owner walked out at one point and asked how we liked our food. I truthfully gave a thumbs up, as I always seemed to get asked that question right after I take a bite. My friend said, "I like the salad." That should be a show stopper at a restaurant about meat. When a customer has one bite out of your burger and compliments the salad..... he just walked away.

Now the food/"atmosphere":
It was cold in there. I am normally pretty hot blooded but didn't even think to take my coat off because of the chill.

The rolls were cold inside and lukewarm on the outside, and the butter was straight out of the fridge cold. I did like the Christmas in your mouth flavor of the butter.

My friend took one bite of his burger and asked me to try it. It seemed the fat to meat ratio was way off. The grease coated the roof of my mouth, and it had an off flavor. He said it tasted like cleaner, I thought it was like the bad kind of grease, but probably due to an improperly cleaned grill.

This is kind of a service/atmosphere thing. It's a small place so it gets crowded fast. But instead of asking the people who ere standing, waiting for something by the bar, the staff, including our waitress, kept bumping and brushing up against my friend to get by.

When I saw the sign on the door that they were open on Sunday "for the holidays" I had a sinking feeling, but hoped they would deliver. They did not.

Based on this experience, I would NOT recommend it to anyone. No plans on going back.

Wheelchair accessibility: It's a small place but you should be able to access it fine with a wheelchair.
