Stopped by here on our way to visit family and didn't want to do fast food. We stopped here and seated immediately. Unfortunately, that's where the good times ended. The food prices on the receipt didn't match the menu prices and our server didn't even ask the kids what sides they wanted, just brought out an entree; we had to flag her down and ask for fries for the kids. Overall, definitely not worth the $75 (after tip) for a family of 4 for lunch

Atmosphere & Arrival
Rolling in around 1 PM, it was clear that the lunchtime rush had just simmered down. The place had that post-battle calm—tables scattered with remnants of barbecue triumphs, satisfied diners leaning back in their chairs with that unmistakable “food coma” glow. I grabbed a spot at the bar, ready to dive into a proper feast, starting with an ice-cold Yuengling Flight—because when you’re about to tackle some serious smoked meat, you need the right liquid courage to prepare. đŸ»

The Feast
Now let’s talk about the masterpiece—the BIG DADDY MAC BRISKET BURRITO. Just saying the name makes you feel like you need to brace yourself for impact. This behemoth of a burrito is stuffed with:
✅ Slow-smoked Angus brisket—tender enough to bring a grown pitmaster to tears.
✅ Mac & cheese—because if you’re gonna do comfort food, you might as well go all in. 🧀

Side Dish Glory
Normally, coleslaw is just an afterthought—a little cooling crunch before getting back to the main event. But this coleslaw? Oh no, this coleslaw refused to be ignored. Creamy, flavorful, and perfectly balanced, it was hands down one of the best I’ve ever had. Whoever made it understands that coleslaw isn’t just a side—it’s a supporting character that elevates the whole experience. Bravo. 🎭

The Verdict
Between the fun atmosphere, friendly staff, and barbecue brilliance, The Ribcage is officially locked into my must-return list. If you’re anywhere near St. Joe—heck, even if you have to take a detour—DO NOT skip this spot. Your taste buds will thank you. 👏

I came here based on a recommendation because I am an avid BBQ fan. This is going to come across as harsh but I would just like to be honest and transparent. We sat ourselves at 2pm on a Saturday. It was rather light on diners but the bar was pretty full. We had waited a solid 10-15 mins before we were acknowledged and told they would be with us in a moment. We all had aspirations of getting Brisket. We were very quickly told that it was not ready yet. Which caused us to look over the menu a bit longer. After some more deliberating we all made our choices and waited a bit longer to get our food. First of all my wife complained that her burger had quite a bit more gristle than she would of liked. I was looking forward to some bbq so I got the combination plate. Since Brisket was not available I subbed that out for tri-tip I also got pulled pork and did the add on of 4 bones of ribs. I would like to preface this by saying I did try all of the meat by itself first and then with the house sauces afterwards. The pulled pork was extremely dry and literally just tasted like pork no smoke no rub and not a ounce of bark in sight. The ribs were cooked well but also had very little flavor without sauce. The rub was flat and did not inspire much more. Then I tried the Tri-tip and it was juicy but felt like it was just cooked at high temps because it tasted mostly like a roast. I also had the hashbrown casserole and the bacon jalapeno mac and cheese. I will say that the flavor of the mac and cheese was phenomenal and easily the best thing that I ate. The hashbrown casserole was better than average but it was hard to compete with the mac and cheese. All that being said I believe the prices are way too steep in comparison to the quality of the bbq I had. BBQ is a labor of love and I do not mind paying a bit if the flavor is on point. This was not it for me.
