McPherson, KS. Holy COW. The absolute BEST fajitas we have ever had. Like a dance party in your mouth. The salsa was so fresh and refreshing… delicious. We got the cheesecake chimichanga with raspberry for dessert to go. We got to the truck and it smelt so good so we took a bite and melted into it. If I wasn’t full I’d order a second plate. They are from ElPaso, started in a food truck, and made home base here I think they said a year ago and the boss lady has it going on...
We found La Jefa as a pink taco truck at the motorcycle rally in Marquette, KS. We were so happy when they opened up a restaurant in McPherson! The food is always fantastic, great service and at a fair price. This place is a must try! We make the trip from Salina just to eat there!
I stopped here on my way to Chicago. I ate some chilaquiles, the taste was good. However, the service was very poor. Also, the fact that the restaurant shares the space with other businesses, I didn't like that. Something you'll notice when you open the door, the whole dining room smells like tacos, gorditas, chilaquiles. They need to get a better cooker hood filter. I went home, and my jacket smelled like tacos. I don't know if I'll go back.
