David Gilbert is a talented chef. The dishes that remain from the restaurant menu (Escargot, Steak Tartare, Creamy Risotto) are gourmet tastes. Les pommes frites are genuine Paris. The bar shelves, like the menu, secret unique tastes (an '82 Armagnac). Sadly, these refined offerings from an elegant restaurant that would have been embraced in world-class cities did not pay the bills. Thus, Marais has morphed into a market plus bistro whose offerings bridge the value-conscious...
There trying to stay afloat, the food is very good in the bar. it's a good idea for the market with the center island, but they don't have the right design...I am from Europe would like to see them succeed. Hope they will read my post and go see Gaudino's on Harper. Thank you
I've been a few times - once before the reorganization into a cafe & market, and a few times after. I've always had good experiences - the dinner at the old Marais for my university graduation is one of my fondest memories; I still have the card from the chef's tasting menu! I'm sad to remove a star because the market is not meeting my (possibly too) high expectations. I was in the other day and I bought a bag of extremely moldy bread without thinking to...
