Hope is a delicious and hip breakfast spot. A lot of these reviews must be people grouchy in the morning. I’ve been here and their other locations several times and have always had a great experience. I highly recommend their blackened cauliflower or pimento eggs.

I have been to the St Paul location many times but this was my first in Eagan. Food was prepared well, but our server was distracted despite being there at an off time. At peak time this location can get loud. Overall, the experience was good, and parking was much easier than other locations.

I don't understand the hype for this place. It's possible we had a one-off experience but we won't be back. We got there shortly after opening and sat for 15 minutes while other tables were being helped including many sat after us. I had to ask the host what was up and then we finally got someone by. I'm not sure how they do staffing but it seemed like chaos. We got the bare minimum service and then I laughed when I saw the "suggested tip" amount on the handheld machine was like 18, 23, and 30 percent. 30 mother loving percent you folks are absolutely insane. Nevermind the pancake/waffle items come with no sides for close to $20. What are y'all doing? I have no idea how this place stays packed. Nevermind it also gets REALLY loud in there. Like not "oh it's a busy breakfast place on Saturday" loud. Like...LOUD AF. Can't hear someone on the other side of the table sort of loud. As for the food it wasn't bad, my wife's waffles were actually quite good. But nothing memorable. The huge service fail was enough that I can't imagine us ever going back.

Was in this past Sunday morning (highly recommend reservations on weekends) for the first time and was blown away! Our server was amazing - very attentive, went above & beyond and super fast! The menu has so many great options to choose from that my husband and I couldn't pick just one so we each got two items to try! I got the smoked salmon sandwich and deviled egg sandwich. My husband got the monkey pancakes and country fried steak. We both had a mimosa then shared the coconut rum latte and a pancake shot. Everything was so delicious and came out SUPER fast! I've been looking for a repeat brunch spot and I think I finally found it. Highly recommend this place!!

Food: Pancakes were too thick and not fully cooked in the center, returned. Fruit cup was only unripe cantaloupe and honeydew melon, not edible. Atmosphere: Really, really noisy!

So I am pretty sure my wife and I contracted food poisoning from there. We are both taking turns in our hotel bathroom. The portions are large but flavorless. The service was decent but we had been seated long before someone talked to use. The price was steep. Two meals, two coffees and an orange juice was not worth $65. Also, we are sick. Don’t go to this place!

Great food but the bill shouldn't be reminiscent of a Comcast bill with hidden fees. Just raise your prices to accommodate paying your employees instead of adding a hidden surcharge at the end. It's just 4%. It won't change your customer base and there is no reason to make it a hidden cost. I am happy to support the kind and hardworking staff, but I'm less happy about supporting the dishonest management.

Hope Breakfast Bar fell very short of our expectations. First off I ordered a Green Banana Nitro coffee that after a wait found out they were out of cold pressed coffee. I was able to substitute for an standard iced vanilla coffee. I was excited to try the biscuits and mushroom sausage gravy. The biscuits were very doughy and the gravy lacked flavor. My mom ordered the Breakfast Tostada with a fried egg. She asked if she could have her egg over easy. She was charged $4 for the substitution. One coffee w/ no refills and two breakfast meals were $40.

Absolutely delicious food, and some of the fastest service I’ve ever had at a breakfast restaurant. I wish I’d thought to take more photos but I was too busy eating. The lavender latte was sublime. The McHope sandwich was one of the best breakfast sandwiches I’ve ever had. All waitstaff were excellent. I’ll definitely be back!

I had a great lunch at Hope Breakfast Bar in Eagan. Loved the Hawaiian salad and lavender coffee. It’s a cozy place with nice service. Definitely recommend it
