Such a cute little shop!!! I love supporting small coffee shops because they always taste so much better!!! This one is so good and every morning I’ve gone the staff is so kind and happy!!! So glad I stumbled upon this spot! ❤️

I drive 15 minutes one way just to go to this coffee shop, skipping several other closer options along the way. The coffee is delicious, not burnt, and aromatic. The pastries offer options that include gluten-free, and they are scrumptious. There are a couple of small sitting spaces indoors and a nice sitting area outdoors. The atmosphere is welcoming and you can tell the staff really enjoy being there. I regularly see at least one owner at any given time there as well... so you know it's a place of love and dedication to their craft. My only complaint is that there isn't a larger indoor lounge area and the only reason that is a gripe is because I love this place and could spend hours there drinking coffee and eating pastries while I study. I highly recommend this place.

I love the friendly baristas. I like the atmosphere both inside and out. I would say the limited hours is the only downside. As 7am is late in the morning for a first cup of coffee. Great pastries as well.
I always get a vanilla coconut iced latte. The girls are so sweet. Also the coffee shop is just cute in general!

I adore Sunshine Coffee Co! I frequently visit for a London fog and pastries and I cannot recommend it enough! If you get a chance to try one of their croissants (especially the chocolate or harry asparagus), take it, they are the best I've ever had!

When Erica and her team opened Sunshine Coffee in our neighborhood, they filled more than just a coffee void! Sunshine is the PERFECT name because they will light up your day! The staff is personable and friendly, the atmosphere is light and welcoming, and their coffee is fresh and delicious. Their community-focused outlook has been a wonderful addition to downtown Lake Elmo!
