We had heard that there had been some changes made since the last time we went here. Our previous visit had been a bit disappointing because we had been used to the quality of Mongos. Well, we were pleasantly surprised. They had eggs available now, white or fried rice, spices and a good selection of meats and seafood including crab and pollock. Our experience was fine. I didn't feel like the ingredients were all fresh.
We weren't sure of the process since we had never been to HuHot before, otherwise we would have changed how we put our bowls together.
It's nice everyone can pick exactly what they want but never trying it before it makes it hard to know what the flavors are and what ingredients go well together.
We're not rushing to go back but would if someone in our party...

Brynn was the best server I’ve had in a LONG time. Attentive, funny and clearly enjoys his job. The food is what you make it but the service is top notch and it is allergy friendly which is a bonus! 10/10
