Nachos Fresh Mex has a pretty extensive menu, with more than the common American Mexican standard dishes you typically see. They have plenty for meat and shrimp lovers. And even have a vegetarian menu with 4-5 combo plate options. I eat veggie / plant-based, and find my fave to be veggie fajita platter. I've also made it a dinner just by ordering their bean dip appetizer and guacamole with chips. That was enough food for two as a light dinner. Oh, and their margaritas are the best. Go Cadillac, go pitcher and plan to walk home :-) I love spicy and their jalapeño marg is the best I've had, I crave it and visit Nachos sometimes just for the margarita.Vegetarian options: They have a vegetarian menu section with 4-5 combo plate options. Those combo plates look kind of standard to me: burrito, chalupa, chile relleno. Instead, I typically order veg dishes from other sections of the menu, like the spinach quesadilla. And my fave is the veggie fajita platter. I've also made it a dinner just by ordering their bean dip appetizer and guacamole with chips. Queso is standard in the bean dip, so if vegan order it without cheese.
