The coffee was good, food was average, and despite only 1 server, the service was consistent.
I ordered the turkey hash bowl and while the presentation was nice, it had too much basil that overpowered the entire dish and made it really hard to determine if there was any turkey at all.
Nova Cafe is middle of the road as there are other food options in downtown Bozeman.

The restaurant had plant milks for coffees/lattes, some fresh juices, and gluten free/vegan options. The GF bread is not vegan. Most egg dishes could be subbed with blocks of sautéd tofu (not scrambled). Has potential to be better, but some little details like a large solid scoop of hard coconut oil on top of the waffles to replace butter could have been done better to let it melt, or offering real maple syrup as an option would have e been nice.
