We had dinner at Black Canyon Bistro tonight, and it was absolutely incredible. I ordered the special — grilled romaine with feta, cashews, and 85-day dry-aged elk, topped with marinated blueberries, pickled fennel, and an orange-scallion vinaigrette. I know it sounds like a lot was going on… and it was, but every flavor was perfectly balanced. Seriously, so good.

I’m still remembering the tender bite of the elk medallions. Yeah, it was just last night for dinner but I’m waking up wanting more. And the sauces! Someone knows what they are doing in the kitchen! Bar tender Kate and manager Jensen made us feel like locals.
We went to Black Canyon Bistro on 9/7/24 for dinner.. the staff was excellent, couldn't ask for better service. The atmosphere was very good and not loud at all.
I do have one big complaint though.
I am a lifetime beef rancher, meat processor and have been a beef restaurant review critic for many years.
