Roots and Vine puts great care into every detail and every bite. The food was outstanding, the service and ambiance were great, and the wine pairings were also very good. Love to see a chef creating courses that don’t exist the same way anywhere else, and each was worth savoring.

Cannot recommend this restaurant enough! My husband and I were excited to try something new for our time in Highlands when he stumbled upon Roots & Vine. We were blown away.
We went on a Sunday evening at 7:30 and had not only a great meal but also incredible service (thanks, Matthew!). Most of the food is also locally grown/sourced in Appalachia and the menu is reflective of that - inventive, fresh and delicious. Don't miss out on the wine pairing either. The menu changes frequently, so we're excited to go back again on our next trip!
I had dinner here last Saturday with some friends, and this was not only the best dining in Highlands, but honestly one of the best meals of my life! I dine out a lot around the country, and the team and Roots & Vine can go head-to-head with the best of them. The restaurant is small, intimate, and warm. The chef sources the food from the mountains and only cooks what he can find locally and in season. They even made soap out of the rendered A5 tallow and gifted us a bar after dinner! I highly recommend the wine pairing as well! I cannot wait to come back, as the menu changes frequently and with the seasons!!!

What an incredible dining experience! We just had dinner here and it was one of the best I've ever had! The chef is doing something unique and needed in Highlands! Each course spoke to the love the kitchen has for Appalachia and all it has to offer! We had the wine pairing and it really set the night off! Sous Chef Rose visited our table and was so kind and excited to share everything with us! The service was great, warm but honest! We will definitely be back soon and tell all of our friends! Thank you for a great evening!

My husband and I had the BEST dining experience of our lives here!! The scallop teaser was probably the best thing I’ve ever eaten in my life, everything was actually. We did the wine pairing and it was phenomenal. This was not a cheap meal but absolutely worth every dime and I would have come back and done it all over again but they were closed during the rest of our visit to highlands. Do yourself a favor and splurge.

DO NOT MISS THIS PLACE!! I eat out a lot and enjoy very nice cuisine and tasting menus from around the USA and the world and this Roots & Vine is among some of the best.
This food is world class. The quality and preparation of the ingredients highlighted the region and talents of the kitchen. Normally with a tasting menu, there are a couple of stand outs and a couple of mediocre courses. At this dinner EVERY COURSE delivered! I can’t think of one course that “missed” for me. The presentation of the food is meticulous and beautiful. The tweezers are getting a lot of use in the kitchen.
We had several courses where we were presented options at the table and in all cases, both options were outstanding. We had a nice visit from both Chef and Sous Chef.
The service was also spectacular with focus on every attention to detail. We did not do the wine pairing, but their wine list was extensive and I am certain it would be remarkable. We did order 2 nice wines with older vintages which were great and complemented the food.
The atmosphere was spacious but intimate and not pretentious. This is a must do and a value for the money.
