Masaman Curry
Massaman curry (kaeng mat-sa-man), pronounced [mát.sa.màn] is a rich, relatively mild thai curry. Being a fusion dish, flavors originally brought by Muslim traders from Persia, the Indian subcontinent and Malay archipelago. E.g. cardamom, cinnamon, cloves, star anise, cumin, bay leaves, nutmeg, mace, and potato) are combined with more local, commonly used flavors. E.g. chili peppers, coriander, lemongrass, galangal, white pepper, shrimp paste, shallots, and garlic. To make massaman curry paste.
Yellow Curry
Yellow curry (kaeng kari) is a curry made from cumin, coriander, turmeric, fenugreek, garlic, salt, bay leaf, lemongrass, cayenne pepper, ginger, mace and cinnamon. It generally contains less chilli than other curries. Thai yellow curry is most typically served with chicken or beef and a starchy vegetable, most often potatoes, but it can be made with duck, tofu, shrimp, or vegetables and is eaten with steamed rice.
Green Curry
Apart from a main protein, traditionally fish, fish balls, or meat, the other ingredients for the dish consist of coconut milk, green curry paste, palm sugar, and fish sauce. Thai eggplant (aubergine), pea aubergine, basil leaves or other green or vegetables. The consistency of its sauce varies with the amount of coconut milk used. Green curry paste is traditionally made by pounding in a mortar green chillies, shallots, garlic, galangal, lemongrass, kaffir lime leaves, cilantro roots (coriander), and cumin seeds, white peppercorns, shrimp paste and salt.

Red curry kaeng phet, pronounced, lit.: 'spicy curry'. Is a popular thai dish consisting of red curry paste cooked in coconut milk with meat added, such as chicken, beef, pork, duck or shrimp, or vegetarian protein source such as tofu.

If you can get past the liminal vibes of the place, the food really is as good as everyone says. The veggies in my green curry were crisp and fresh, and the crispy chicken was delicious and well cooked. My bf’s pad Thai was also really good. Of course you would expect the middle of Vermont to have an amazing authentic thai restaurant. I am picky about my Thai food and was very pleased to see the common Thai street food item of Thai fish cakes on the menu. It’s not a REAL thai authentic experience without them.

One of my favorite Thai places, and by far the best in the area. The food is great, service is wonderful, and the staff is so nice and welcoming. The chive dumplings and boba are to die for. The grocery side is also great with a huge selection!
