The cheese danish was perfect. Sparkling water in a coffee shop is a must and I’m glad they had it! The barista was so adamant about getting me the perfect double espresso and I was very impressed. It was a great experience
Rojo’s is the best espresso in Princeton. Locally roasted. Expertly prepared. Their latte’s and cappuccino’s are smooth and rich. They make their own syrups to expert effect. The fact that they have Gingered Peach pastries is icing on the cake, or microfoam on the latte? Whatever. You get the point. The staff is attentive and engaging. There are some great coffee shops in Princeton, but Rojo’s is the best.

I had a latte with rosemary brown sugar, and my husband got one with caramel. The flavors in mine were present, distinct, and balanced, without overpowering the coffee. My husband's caramel syrup tasted like caramel candies without being overly sweet. It was also a very distinct flavor.
